Rasagullas
Growing up in Pondicherry, where there are a lot of Bengalis thanks to the Aurobindo Ashram, I've had my fair share of Rasagullas, Rasamalais and other Bengali sweets. I''ve wanted to make them from scratch for a long time now (I think I've tried it once several years back), it finally materialized only now. I had to make it twice ( I made some mistakes the first time), before I got it close to perfect, it's not as complicated as it appears, in fact I would classify it as an easy one, compared to the other Indian halwas and burfis which needs a lot of stirring, try it out if you like milk sweets..
Need To Have ( for 10 rasagullas )
- Milk - 1 liter
- Lemon Juice - from 1 to 2 lemons
- Sugar - 2 cups
- Semolina Or Rava - 2 teaspoons
Method
Heat the milk, when it starts boiling, add the lemon juice, stop adding when you see the milk solids separating from the whey water. Remove and strain it in a piece of thin cotton cloth.
Bundle up the cloth around the milk solids (paneer) and wash the bundle in running water, this removes the lemon smell from the paneer. Squeeze the excess water and bind it up and hang it from the faucet for about 1/2 an hour. Then remove and take it in a plate, it will be crumbly. Knead this crumbled mixture along with the rava or semolina for about 5 minutes, till you get a smooth dough, shape it into small balls ( makes about ten, I got 20 because I made twice the quantity).
Heat 1 cup of sugar and 3/4 cup of water, boil till dissolved and forms a thin consistency sugar syrup. Remove and keep, in the same vessel (I used the pressure pan ), add the remaining 1 cup sugar and at least 3 cups of water, bring it to a boil.
Add the balls, cover with the lid, do not put the whistle, when you see the steam coming, reduce the heat and cook for about 7 mins. Switch off, open the lid after a few minutes, once the steam settles down. Remove the balls, they would have become 1 and a 1/2 times bigger now, and add it to the sugar syrup that we made with the first cup of sugar. Let it soak for at least an hour, serve it chilled.
Note
Don't wash the paneer with water, just the outside binding cloth.
When you press the cooked balls, it'll yield but it'll come back to shape.
If not using the pressure pan, cover and cook, it'll take longer than the pressure pan, about 15 to 20 minutes. Also keep adding water to the sugar syrup, otherwise it'll become very thick. Check the balls if it is cooked, then remove. Also the vessel should be large enough, since the balls expand in size when cooked.

Bottle Gourd Dal
After coming to India, I have slowed down, I am hardly posting twice in a week, is it due to more work here or because of the internet connection here, I don't know. Everytime I think, I should do better the next week, but end up doing the same, hopefully I'll be much more organised in the future. Well, today's dal is a very easy and tasty recipe which I had learnt from a Punjabi friend, in fact till sometime back, I had been using bottle gourd to make this dal only, never tried out even a sambar with it. I have used chana dal (skinned split black chickpeas) for making it, you can use the whole chickpeas, except that you have to soak it before cooking. This goes well both with rotis and any kind of rice or pulav, a mild yet flavorful dal..
Need To Have
- Chana Dal - 3/4 cup
- Bottle Gourd - 1 small chopped
- Onion - 1 medium chopped
- Cumin Seeds - 1 teaspoon
- Cloves - 2
- Cinnamon - 1" stick
- Turmeric Powder - 1/4 teaspoon
- Chilli Powder - 1/2 teaspoon
- Garam Masala - 1/2 teaspoon
- Coriander Powder - 1 teaspoon
- Chopped Coriander Leaves - 1/4 cup
- Onion - 1 medium
- Tomato - 1 medium
- Ginger - 1 tablespoon chopped
- Garlic - 4 cloves
Pressure cook the chana dal and the bottle gourd along with the turmeric powder (just like you cook rice), grind the ingredients given under make a paste. Heat oil, add the cinnamon, cloves and the cumin seeds, when the cumin seeds start sizzling add the chopped onions, saute for a couple of minutes. Then add the ground paste, followed by the chilli and coriander powders, saute well till the raw smell goes away for about 5 to 7 minutes (sprinkling water if the mixture turns too dry and sticks to the pan).
Then add the cooked dal and vegetable, mix well, simmer for 5 minutes, mix in the garam masala and the chopped coriander leaves. Serve it warm with rotis or rice.
Note
You can use a mixture of chana dal and moong dal.
After adding the dal and vegetable, if it is too thick, mix in some water and boil.

Pour ce faire, il avait mandaté Mr Brauge , conseiller municipal spécial du Cap Ferret, pour recevoir une délégation de riverains de cette avenue.
La rencontre a eu lieu le 20 Aout à la mairie annexe, la lettre ci dessous lui a été remise:
- La vitesse parfois excessive (supérieure à 50 km/h) ; l’hiver ce sont souvent des véhicules de professionnels camions et camionnettes qui roulent au-delà des limites (“à tombeau ouvert “), l’été des vacanciers, tout à l’enthousiasme de leurs vacances se sentent libérés de toutes contraintes (l’alcool aidant parfois !).
- L’occupation anarchique des trottoirs ne laissant pas de passage de déplacement soit par un stationnement des véhicules , soit par une occupation physique (dénivelés d’entrée de propriété, entreposage de matériaux, machines,…) sans tenir compte de condition de sécurité pour les piétons( visibilité pour les voitures circulant) ; Cette occupation excessive des trottoirs contraint les piétons (avec poussette, poussant un vélo, tirant un caddie de courses, tenant des enfants en bas âge par la main, poussant un fauteuil d’handicapé ,;…) à emprunter la chaussée.2 Quelles solutions envisager ?Rappel :Pour l’avoir déjà évoqué avec Monsieur le Maire, l’avenue de Bordeaux n’étant pas une voirie municipale mais départementale, celui-ci nous a indiqué qu’il lui était difficile d’intervenir directement sur cette dernière. Cependant, le premier magistrat de la ville a les moyens de faire pression sur les services du département, surtout si leur responsabilité en matière de sécurité est également engagée.
- Dans un premier temps, ne nécessitant pas d’investissements lourds autre que communication et information règlementaire :
- Rappel des limitations de vitesses et davantage de contrôles de vitesse inopinés (radar mobile) – qui ont une vertu pédagogique !!! – il semble d’ailleurs qu’il y ait davantage d’excès de vitesse l’hiver que l’été (en proportion du nombre de véhicules circulant).
- Limiter pendant la haute saison les secteurs les plus accidentogenes par l’ajout temporaire de panneaux de limitation 30 (comme avenue du Sémaphore ou avenue de la Marne).
- Rappeler aux riverains (par tractage dans les boîtes aux lettres et articles dans la revue municipale) disposant de places de stationnement dans leur propriété (obligatoires dans les permis de construire) de garer leur véhicule à l’intérieur plutôt que sur le domaine public.
- Mettre en place un stationnement règlementé sur les trottoirs :
- Lorsque ceux-ci sont assez larges, garer le véhicule en limite de chaussée ou près des clôtures pour ménager un passage (largeur un mètre – quelle est la règlementation pour handicapés ?).
- Sinon ne se garer que d’un côté de l’avenue (stationnement alterné ou non )
- faire supprimer les “embûches“ dénivelés dangereux,
- n’autoriser l’entreposage temporaire sur les dits trottoirs que lorsqu’ils sont nécessaires, et en obligeant à mettre en place un dispositif de passage sécurisé pour les piétons (par exemple : règlementation travaux et occupation de l’espace public).
- Dans un second temps, si les mesures précédentes sont insuffisantes, réglementer davantage :
- Limitation de vitesses sur les tronçons les plus dangereux par dispositifs physiques – chicanes, dos d’âne,
- Interdiction de stationner sur certaines parties de trottoirs (l’arrêt - dépose restant autorisé.
- Aménagements d’amélioration :
- de déplacements doux par création de pistes cyclable mixte piétons vélos comme il s’en est créé dernièrement.
L’aménagement de pistes cyclables complémentaires dans les parties urbanisées du Cap ferret se révèle maintenant plus nécessaire :
- par exemple entre le bourg du Canon et la piste à hauteur de la dune de l’Herbe,
- établir une liaison cyclable au niveau des “Sables d’or“ pour indiquer et permettre aux cyclistes d’aller sur la piste en forêt.
- Mise en place de séparateurs physiques sur les trottoirs (poteaux comme rue des goélands) pour les piétons.
Green Pasta..Pizza Hut Style??? No, No..better than that ( Step Wise)
Hi All!
It seems like ages that I wrote a post, and today as I type this post, I’m wondering, how many things happened in the past few days and I was so involved and engrossed in all those activities that I simply forgot that I have a blog too, which was completely ignored all these days and yes, I did not visit any blogs too..
I want to do so much for my blog but unfortunately I’m not able to. Some times I feel that I’m too slow hence I’m not able to accomplish what I actually want to, but at night, when I sit and try to look back at what all I completed in the day, it appears humongous. I guess I’m just trying to be positive about myself and the life I lead, but must confess, the pressures of life are taking over me.
My regular readers would know that about 2yrs back I was fighting a continuous low grade fever which had weakened my system and immunity, looks like I’m getting back into the fever mode (I’m not talking about the game, Moon Chaser here…LOL) but on a serious note, I’m not too well… I do drag myself through the day but by night I’m tired and definitely irritable as I’m left with no energy but the multitude of work does not let me sit and relax..
Anyways, enough of my health saga, do not want to bore my readers with that but I thought I do owe you an apology for disappearing suddenly, hence the explanation..
On a positive note, my elder kid joined Pizza Hut as a part timer, we thought that this will help him earn his pocket money and at the same time since it’s his hard earned money, he will learn to spend it thoughtfully. I feel todays generation loves to spend more and do not think and plan their future. Hopefully, my kid will learn to spend money thoughtfully. The kid had to undergo a training and then he worked in the kitchen for a week before he joined the front office. While working in the kitchen, he asked us to visit Pizza Hut, so that he could make a Pizza for us.
Personally I prefer Domino’s over Pizza Hut but for the kid we went.. he made two pizzas for us, which were nice. During the visit, the younger one also ordered a green pasta which was basically Fusilli and green veggies tossed in Pesto Cream Sauce. To our disappointment the pesto had no flavor and that was one of the worst pastas we ever tasted. I personally feel that Pizza Hut is over priced for the kind of food it serves but this is my personal opinion..
But then, I promised myself to make my version of that horrendous pasta that I ate, as the Pesto I make is definitely good. Fortunately I got hold of good basil leaves a few days back and that too at a good rate!! Yes, basil leaves are quite expensive here!! So, I did make the Pesto and then I did make the green pasta. You know what, it was finger licking good and at the same time very simple to make, hence I thought of sharing it here, as for Moms like me, this is an easy way of feeding the kid so many greens in one take..One helping of this pasta is quite filling. This version can make a main course as well as can be served as after play snack.
Green Pasta
Preparation Time: 15mins
Cooking Time: 5mins
Serves: 1
Ingredients
1cup boiled pasta (use any durum wheat pasta)
5-6 small broccoli florets (par boiled)
2french beans cut into thin oblong pieces
1/4th green capsicum, cubed
2-3inch piece green zucchini, sliced
2-3tbsp basil Pesto
3-4tbsp grated Parmesan cheese
100ml fresh cream ( I used low fat)
1tbsp butter +| 1tsp oil
1tsp chili flakes
a pinch of oregano
a few basil leaves
salt (if required)
Method
Boil the pasta al dente in surplus water with salt. Remove in a strainer and use immediately.
Heat the butter and oil together.
Add chili flakes and oregano, followed by French beans and Zucchini, sauté.
Add the Pesto and sauté for a few seconds.
Add the broccoli and pasta and toss on high flame.
Add the cream and capsicum and mix. Keep the flame low while doing this else the cream could curdle or scathe.
Lastly add the grated cheese and mix I’ve used Parmesan cheese but one can use cheddar or processed cheese). Switch off the flame immediately, taste for salt requirement (if you feel that the sauce is too thick, add a few spoons of water and bring the sauce to a boil). Normally additional salt is not required as the pasta is boiled in salted water and the cheese also has the salt.
Serve immediately.
Minty Quinoa
I have been neglecting my blog for more than a week now, my parents and sisters had come over, lots of cooking but couldn't find time to check on my blog. Well, today's recipe is yet another simple and healthy preparation with quinoa (I have a packet with me that I had brought with me from the US). But for those who can't find quinoa, you can do the same with couscous too, also the other day I found a packet of quinoa (of course imported one ) at Nilgiris in Chennai. Now coming back to the dish, it gets its flavor from the mint leaves and tastes great with any raitha or plain yogurt too..
Need To Have
- Quinoa - 1 cup
- Mint Leaves - 2 cups
- Potato - 1 medium cubed
- Capsicum - 1 small chopped
- Tomato - 1 chopped
- Green Chillies - 2
- Chopped Ginger - 1 teaspoon
- Cloves - 2
- Cinnamon - 1" piece
Method
Cook the quinoa as per the instructions on the packet and cool it. Grind the green chillies and ginger. Also grind the mint leaves coarsely without adding water. Heat some oil, add the cinnamon and cloves, once the cloves start spluttering, add the potatoes, saute for about 5 minutes, then add the chilli-ginger paste, saute for another 2 minutes. Now add the capsicum, keep mixing for another 3 minutes, add the coarsely ground mint leaves, salt, saute for another 5 minutes. Then add the chopped tomatoes, mix, cover and cook for 5 minutes. Switch off, allow it to cool down, then mix in the cooked quinoa.

Note
You can mix in the quinoa when the minty potato mix is still hot, but you should take care not to make it mushy, try to fold it in gently, leave it for some time like in the case of briyanis, then serve it.
Also, though it might look sticky, as it cools down, it actually becomes dry.
Do not overcook the quinoa.
Can also add some cooked peas or chickpeas.
