Avarekaalu Dosa | Indian Pancake With Hyacinth Beans| Vegan | Gluten Free | Step Wise | Winner Of September’s Only Event

Hi All!!

It is that time of the year when Avarekaalu is seen frequenting in the market and if I notice a good quality beans, I’ve to buy it. It so happened that I bought a big batch of the beans and my MIL got me more from Blr, so I had a lot of peeled avarekalu/mochai/ hyacinth beans at home, ready to use.

Whenever I’ve Avarekalu at home, the things regularly made are the akkitari Uppittu, avarekalu saaru and the akki rotti. Once I went more experimental and tried ambode which did turn out well. Each of these recipes have been posted step wise for people to understand it methodically. I was getting tired of going back to the same recipes again and again. It’s not that I do not like them but one needs more variety to try and savour, isn’t it? Hence, this time I decided to try new recipes using the beans and the first recipe that I laid my hands on was the avarekaalu dosa..

Recently when we had visited Blr, my elder son insisted to try out some breakfast joints and on one such occasion we tried the avarekaalu dosa, as we all love the beans. Since the joint had an open kitchen, I carefully observed how he made the dosa and during eating kept the ingredients in mind and also the flavour. The dosa we ate was a little bland for me, for my family an extra chilli and little more curry leaf flavour was required, so I kept that in my mind.

Keeping all the flavours and ingredients in mind I went ahead to make the dosa. I keep playing with my dosa batter and this time I used a different mix of lentils and rice than what I used for the shahi dosa, and I must say I loved the batter mix!! It was light to eat, crispy and the dosa crust had a beautiful colour. The dosa was very tasty but filling too, one dosa and I was done. This dosa can be made for a heavy breakfast and even for lunch too. I wouldn’t recommend it for dinner as it’s heavy to digest and one should essentially have a lighter dinner.

Avarekaalu Dosa

 

Preparation Time: 10hrs | Cooking Time: 3-4mins/dosa | Makes- about 10 | Serves:4-5 | Difficulty Level: Needs Skill

Ingredients

For Dosa Batter

4measures Dosa rice

1measure urad dal/ split black gram

1measure mix of masoor ( red lentils), tuvar( red gram) and chana daal (bengal gram)

a handful of poha/ beaten rice

1tsp methi/ fenugreek seeds

oil for making the dosa

For Avarekaalu mix

3cups boiled avarekaalu/ hyacinth beans

1-1/4cups steamed grated coconut

7-8 green chillies, chopped

a large handful coriander, chopped

2-3 sprigs curry leaves, chopped

3tsp mix of urad-chana daal (split black gram and Bengal gram)

salt to taste

4-5tsp oil for cooking

Method for Dosa Batter

Soak the rice, lentils and fenugreek separately for 4-5hrs and soak the beaten rice one hour before grinding.

Grind each of the ingredients to a smooth, fine paste and mix them together. Let it stand for 4-5hrs or more for fermentation. At my place it ferments in 4-5hrs.

Add salt to the batter and mix thoroughly to remove the trapped air. Also add enough water to make a thick but still a flowy batter. The batter should be of the consistency made for frying fritters

Method For Making The Avarekaalu Mix

Steam the coconut and avarekaalu separately with a little salt, till cooked and soft. It normally takes one whistle in the pressure cooker.

Heat oil and urad-chana daal mix and let it turn golden in colour. Add the green chillies and sauté for a few seconds. Now add the chopped curry leaves.

Add the steamed avarekaalu, coconut and salt to taste and cook together for a few minutes. Finally add the chopped coriander and give a final mix. Cool the mix. This mix can be eaten by itself too without the dosa batter.

Method for making Avarekaalu Dosa

Heat the griddle and season it properly with oil. Sprinkle some water to bring down the temperature if the griddle’s very hot.

Take a large ladle full of batter and put it on the griddle. Take a handful of the mix and put it on the batter. Dip hand in water and press the batter to spread evenly and give a round shape. This step has to be done very fast as it becomes difficult to spread the batter once it starts cooking.

If you like a thin dosa only, in that case spread the dosa thin using the ladle in concentric circles and very quickly spread the avarekaalu mix on it. Gently tap lightly to fix the beans on the batter. In this case flipping can become difficult so cover the dosa for a minute and cook only on one side.

Turn the dosa to cook the avarekaalu side once one side is cooked. Put a little more oil around the edges. Flipping can be avoided too in that case after spreading the dosa cover it with a lid and cook.

Serve the dosa with coconut chutney.

The festive and the fasting days have begun, so let me start by saying ‘ A Happy Navaratri’ to all my readers. I have  explained the significance of the Navaratra and Dussehra previously here and have posted a few fasting recipes earlier, which to my delight many of you have tried, liked and appreciated.
Since the ‘Navaratri’ have begun and many people are fasting, I thought of sharing a fasting food recipe. I was amazed at myself that I had never managed to post the most commonly eaten fasting food till date here…I gently admonished myself and steered the foodie in me to cook & post it right away.
Sabudana/ Sago khichadi is loved by all my family members and I cook it quite frequently in my kitchen. As a matter of fact, I stay quite away from fasting and my family does not need any special occasion or a reason to savour this preparation.
As a child I would always prefer sabudana over mordhan/ sama rice during any fasting meal for a simple reason that the sabudana was served with the kokam-dalchini aamti and mordhan with yogurt/dahyatli amti. I would demand my mom to make the kokam-dalchini aamti for me whenever she made sabudana. I loved the combination of the fairly plain khichadi with the spicy- tangy aamti to the core and I was pleasantly surprised when my both the kids also loved it  and started demanding that I should make the aamti if I’m making the sabudana.
The kokam-dalchini amti or the Mangosteen-Cinnamon soup is a recipe that I learnt from my mother, which she had learnt from her mother, who was fondly called ‘Akka’ by all of us. It is a recipe that has come to us from my Granny’s mom’s side, passed through generations. I do not want to sound pushy but still I can’t resist myself saying, please do try it, I highly recommend this aamti/ soup to all my readers as the combination is unusual and absolutely worth a try..

Sabudana Khichadi &Kokam- Dalchini Aamti

Soaking Time: 4-5hrs | Preparation Time:15mins | Cooking Time:30mins | Serves: 4-5| Difficulty Level: Moderate

Ingredients

For Khichadi
3-1/2cups dry sago
8-10green chilies l(spicy)
250gms roasted peanut
3 small potatoes, finely sliced or boiled & cubed
1tsp sugar
salt to taste
1/2 - 3/4cup refined oil for vegan version or ghee (melted)
For Aamti (non vegan preparation)
a large fistful of roasted peanuts
1/4”piece ginger (optional)
a few strands of coriander leaves with stem
1tsp roasted cumin
1/4cup-1/2cup kokam agal or 5-6 kokam soaked in 1/2 cup warm water
1small green chili
10-12 black pepper corn
3-4 cloves
salt to taste
For tempering
2tsp ghee
1/2tsp cumin

Method for Sabudana Khichadi

Wash the sago 3-4 times with plain water to remove excess starch. Decant all the water completely and keep covered for 4-5hrs. Separate the sago with hands.

Grind the roasted peanuts. Mix it with soaked sago. Also mix in sugar and salt to taste.

Heat oil and splutter the cumin.

Add green chillies and sauté for few seconds, so that the flavour gets infused in the oil.

Tip in the sliced potatoes (I do not peel my potatoes) and also add salt to taste. Mix and cook covered.

Add the sago mixture and mix thoroughly. Cook covered for 5-8mins or till done.
Mix in some chopped coriander for more flavour.
Serve hot with the aamti.

Method for Aamti

Grind the pepper, cloves and cinnamon first. Now add the remaining ingredients other than the kokam juice and salt.

To the ground mix add the kokam juice, salt to taste and about 2-3cups water.

Bring it to a boil and simmer for 10-12mins.

Make the tempering with ghee and cumin seeds and pour on the aamti.
Serve hot.

Tips

1. While making sabudana khichadi get hold of good quality sago else the khichadi can turn gooey.
2. Sago is very starchy so do ensure that the excess starch is washed off thoroughly and all the water is drained off too after rinsing.
3.Star Another way of soaking sago which I normally follow and was taught to me by my Grand Mom’s sis is as follows…Rinse the sago thoroughly 3-4 times. Pour water in it such that it has water filled up completely soaking the sago. Keep it half an hour and not more. After that place a big plate on the container containing sago and invert the container and remove all the excess water. Leave the container inverted for 4-5hrs.

Chickpeas in Pickled Spices & Pickled Chickpeas Sandwich Too | Achari Chana | Step Wise Cooking | Vegan | Gluten Free

Hi All!!

I’ve been away from blogging for about two weeks, but it feels like ages. People might guess that I was mopey and I didn’t have anything to post but that was not the case friends (pun intended). In the last fortnight on and off  I could see the fluctuations in the temperature here which I could also compare with my health, which was also going up and down but was largely down with the virus having fun in my body. Also, the younger kid was writing his first term papers and the house had become quiet to let him study. Being the mother I could feel the pressure of his studies hitting me as well. He needed me to be around all the time and help him with his difficulties and doubts. Fortunately he has his last exam today and I’m already elated that I can relax now…what a sense of relief!!!

While the kid studied, I would read a lot of books; fiction, romance and obviously cookbooks. The other day I had run out of the veggies and I had no mood to go out and shop. The lazy me soaked some chickpeas with no clarity or vision in my mind,  of how I would cook it. I wanted to cook something different but had no idea how..

So after soaking the chickpeas I came and sat with the kid, flipping through the books as I couldn’t watch TV too Sad smile. After flipping through some old Good food magazines, I picked up Camellia Panjabi’s 50 Great Curries Of India and I was so happy reading all of them, all over again. While I read, I landed on a recipe of lamb cooked in Pickled spices. After reading the recipe I was too tempted to try it in a vegetarian way. I asked myself, people make achaari paneer, achaari aloo, achaari bhindi, why can’t I try the spices with chickpeas? The thought itself exhilarated me and believe me friends I needed that sense of elation desperately, with all the pressure around. The thought was so intoxicating that I immediately went ahead and searched for all the spices and other ingredients. I realized that a skerrick of an ingredient was not available in the desired amount required for the recipe; I was short of yogurt, so I immediately searched for tomatoes and was happy to see a few of them sitting pretty in the refrigerator.

Bit by bit I garnered all the ingredients and laid them on the kitchen platform and geared myself to cook. Fortunately, I always have ginger, garlic and onion in the pantry no matter what else finishes, so I was kind of sorted with the recipe. The curry turned out superb, perfect to inebriate my spirits. It was well spiced, tangy and perfect to tickle the taste buds.

During the course of cooking I got a thought that the chickpeas with pickled spice blend might taste great with the paav, the thought led me to remove a portion of the dry chickpea achaari, with which I intended to make a sandwich later on. The Achaari Chickpea Sandwich  was quite different & innovative. It turned out very tasty and the kid loved it.

CHICKPEAS IN PICKLED SPICES | ACHAARI CHANA

Soaking Time:4-6hrs | Preparation Time: 1hour | Cooking Time: 30mins | Serves: 6-8 | Difficulty Level: Moderate

 

Ingredients

3-1/2cups Cooked Chickpeas

4 medium sized tomatoes/ 250gms yogurt

8-10 baby potatoes (optional)

2 medium size red onions

a large handful of fresh coriander

6-8 green chilies (spicy version)

1/4tsp red chili powder (optional)

4-5 garlic flakes

2” piece ginger

salt to taste

about 1/2cup oil

1/2tsp dry mango powder (optional)

Pickle Spices

1-1/2tsp Fennel seeds

1tsp cumin seeds

1tsp onion seeds (kalounji)

3/4tsp mustard seeds

3/4tsp fenugreek seeds (methi dana)

Method

Wash the dry chickpeas (about 1-3/4cups) and soak them in water for 4-6 hours. Pressure cook them with some salt to taste and a pinch of soda bicarbonate, till tender. This takes about 25mins. What I normally do is that I let the cooker attain full pressure on high flam, then reduce the flame and cook it on low flame for about 15-20mins.

Dry roast the pickle spices on a low flame for 5mins, cool and grind them together. I have powdered here but one can keep it coarse too. Fill the spice mix in slit green chilies and the spice mix left after filling be kept aside to be used later.

Roughly chop the onion, tomatoes and coriander.

Grind together onion, garlic and cleaned ginger to a paste.

Similarly grind together tomatoes and coriander.

Heat oil and tip in the stuffed green chilies and sauté lightly for a few seconds.

Add the onion-ginger-garlic paste and sauté properly on low flame till oil separates.

Add turmeric, chili powder and the remaining spice mix and cook for a minute. Add the chili powder only if you believe that the green chilies are not spicy enough. Sauté for a few minutes.

Add the tomato-coriander paste and cook till done. Add salt to taste and dry mango powder. Cook till oil separates.

Tip in the boiled and drained chickpeas. The drained water should not be thrown as it is used later to make the gravy. Mix thoroughly and cook under cover for a few minutes. At this stage when the curry was dry, I removed a small portion to make the Achaari Chana Sandwich.

Add the halved potatoes (this is completely optional) and about 2cups of the drained chickpea water. Bring the gravy to a boil and cook after covering with a lid for about 15-20mins. One can keep the gravy thick or thin as per their choice.

For The Achaari Chana Sandwich

Take two whole wheat bread slices and spread a thick layer of achaari chana on one bread slice. Top the chana with sliced onions and carrot juliennes. Sprinkle some salt and pepper. Cover it with the second bread slice. Heat a panini grill and apply some olive spray. Grill the sandwich. Serve with some sauce/ green chutney and salad.
