Oats - Choco Fudge

Chocolate fudge is an all time favourite with my family and I’ve posted a  few versions here and here. Choco fudge is quite simple to make but this version is even more simpler and healthier too, as I have also added some Oats to it.
This month’s Monthly Mingle had two interesting ingredients to use Ginger and Almonds. I had many thoughts in my mind but I finally got fixed on a sweet. Making sweets is rare thing at my place for obviously fatty reasons but I could not ignore the fact that the kid had been asking me to make the Choco-muesli bars once again.

So, I used the concept of Muesli bars and fudge together, at the same time, did not forget the Monthly Mingle ingredients and came up with this recipe. I assure this is very tasty and at the same time extremely healthy too. It is not overly chocolaty but there’s just right balance of all ingredients. The ginger is just enough to add the right zing. It is a power pack snack for kids after they have played.

Oats-Choco Fudge

Preparation time-15mins
Cooking time-5mins
Serves-4
Makes –8
Ingredients
50gms Dark Chocolate
25gms Sweet Chocolate
2-1/2tbsp Oats roasted
75gms cashew nuts, roasted and chopped
50gms Almonds, roasted & chopped
1/2tsp dry ginger powder (sounth)
2tbsp cooking butter
8-10 small cup cake liners
Food 4-4
Method
Melt Chocolates on a double boiler and add half the butter. Mix.
Add the ginger powder, nuts and oats. Mix.
Finally add the remaining butter and spoon it immediately in small cup cake liners.
Level and refrigerate for half an hour.
Unmould and serve.

Choco-Nut Fudge For My 200th Post

I am surely at cloud nine as I type this post, one and a half years of blogging and 200 posts, not bad right! People say ‘slow and steady wins the race’, I know I am slow and steady and I do feel happy in saying that this blog has surely won a few hearts if not many.

There’s a lot to learn and explore and I am glad to have so many friends who have now become a part of ‘my culinary journey’ at Foodelicious. It’s said that a long journey becomes easy if you have company and this journey till the 200th post would have been difficult without my blogger friends and the readers. Your mails and your comments inspire me to try new and attempt better, so please let them coming in.

I wanted to make a quick dessert as these days I tend to lose patience early, so was in no mood to make anything elaborate. I started exploring my refrigerator and landed on a pack of dark compound. Also, during Diwali I had received large packs of dry fruits as gift which I had to finish, so thought of mixing both the things and make some fudge. S, loves chocolate fudge and I surely was in a mood to pamper his sweet tooth.

I used the bitter chocolate as S loves that, one can use any chocolate of their choice to make this fudge. Please bear with my in process clicks as this process is done very quickly it surely has affected my clicks.

Ingredients

500gms dark Compound

a can of condensed milk

a cup and a half of chopped roasted nuts

75gms unsalted butter

1/2 vanilla essence

Method

Grease a 7”-8” square tin.

Break the chocolate into pieces. In a sauce pan mix the chocolate, condensed milk and butter and heat on a slow flame, stirring continuously till the chocolate melts and the mixture is smooth. Do not let the mixture boil.

Remove from heat and mix 3/4th of the chopped nuts quickly ( I used walnuts, almonds and cashewnuts ). Mix properly.

Pour it into the greased tin and sprinkle the remaining nuts on top. Even the top.

Refrigerate for 2-3 hours or till firm, then cut into square pieces. Makes about 25 pieces.

Store in an air tight container in a cool and dry place.

Triple Choco Berry Brownies for “Taste and Create”

Hi all! Taste&Create event started by Nicole of ForTheLoveOfFood. This month for the ‘taste  and create event’ Nicole had paired me with Dragon Musings. She is a mother of three children and involves her kids into cooking with her. Her ‘thursdays with kids’ are worth giving a look.
While exploring her blog I landed on these Brownies. The recipe asked for strawberries which I replaced with Cranberries, all the other ingredients were available with me, so I headed for these brownies. One can check the original recipe here.
This is the first time I was experimenting with brownies. I had been wanting to make the brownies for quite some time and have been collecting various recipes. Thanks to  Dragon Musings, for making me dare these sweeties which are S’s favorite.
I completely agree to what Dragon Musings says about the brownies, in her words… “I have the most kickass brownies recipe in the world. It gets better the longer you leave it, which is great incentive not to eat the whole batch all at once,(though if you taste them still warm and squishy fresh from the oven (ok, half an hour cooled, so you don't burn yourself on the chocolate bits) you'll find it hard to believe they get better.) and it's so easy to change the recipe around to make different flavors”
Thanks a lot Dragon Musings for such a wonderful recipe. The brownie was crumbly externally and nicely gooey and chewy inside. The only problem I faced was that we had  a power cut during the process of baking, so I lost the track of the baking time, so brownies had a little darker shade than the normal brownies but they tasted awesome…. Smile
While I write this post S is working in the office completely unaware of  what is waiting for him at home….Will surprise him in the evening with these and some Vanilla ice cream, then will let you know his reaction….
I found the procedure quite simple, and to make it further simple I am providing the step by step recipe
Ingredients for the Brownie
185gms (6 oz butter)
185gms dark chocolate broken into small pieces
3 eggs at room temperature
1 1/4 cups caster sugar (I used ground sugar)
2/3 cup plain flour
1/2 cup cocoa
1/2 cup chocolate chips
1 tbsp vanilla essence
3/4  cup dried cranberries cut into pieces
1/2 cup raisins

Preheat the oven at 180C. Place butter and Chocolate in a metal bowl over a pot of simmering water, melt and stir in until smooth. Cool it.

Sift the flour and cocoa together.

Keep the raisins, chocolate chips  and cranberries ready.

Place the eggs and sugar in a bowl and beat it with a whisk or an electric beater till light and creamy. Add the vanilla essence.

Fold through the chocolate and butter mixture.

Mix the sifted flour and combine.

Add Cranberries, raisins and chocolate chips, mix.

Pour in a 9 inch square pan and bake for 35-40 mins. Check with a toothpick, if it comes out clean, the brownie is done.

Cool and cut. Serve it with Vanilla Ice cream.

Chocolate Muesli Bar for My 50th Post & A Few Awards

My 50th post… a milestone achieved. It’s a little over 3 months that I am a part of this foodie blogosphere and yet it seems it was quite sometime back when I wrote my first post- Maavinkayi Chutney. I have made 44 new friends with similar likings who are following my blog. I am very thankful to them for being so supportive.
I remember when I was editing my first post, I was so nervous thinking is it the right post as the first post… and with all those mixed feelings, I just posted it, as we all loved the recipe very much. For that post I got 6 comments and I had 2 people following the Blog. I would think sometimes, now that I have started this blog, would I have enough recipes to post? I dont know But gladly I am still posting and still have enough and more to share…smile_regular. As a matter of fact I have become more experimental and try many more things in my small little kitchen. My family has started teasing me by saying that we eat only blogged food Open-mouthed.
I am extremely thankful to S for being so supportive Red heart. He would read each and every comment that I get for my posts. He would pick up trendy platters, suggesting that they are good for my clicks. He would also read my posts critically and give his inputs.
The most important thing that I learnt about myself after I started blogging is.. I can write and for this I must thank myself, because if it were not for this blog, I would have never realized about this skill.
If I see my first post today, I have come a long way. My friends in the blogosphere were really kind to shower awards on a novice like me. And today with this post I am sharing a few more, I am accepting them humbly and I will try that I do not disappoint my friends and readers in future too, and keep sharing new and interesting recipes.

Coming to the recipe. This is a recipe which S suggested I should make. The kids do not like eating Muesli, so mixing it with Chocolate helps me serve 2 purposes- make them eat Muesli and consume my chocolate slabs which I had bought in excess greedily. Party
These are very healthy bars with the health benefits of both the Muesli and the Chocolate. Chocolate is a natural antioxidant.The main ingredient in chocolate is cocoa beans - the seeds of the fruit of the cacao tree. Recent studies suggest that the antioxidants in foods may reduce the risk of many kinds of illness, from heart disease to cancer. Antioxidants like those found in dark chocolate and cocoa have also been linked to some of the hallmarks of good cardiovascular health such as enhanced blood flow, healthy cholesterol levels and, in some cases, reduced blood pressure. So should not we indulge in more Chocolates?Smile
About the Muesli
A diet rich in fresh fruits and vegetables has been shown to significantly reduce the risk of cancer and other age-related diseases, and fresh muesli is a tasty way to start the day with one or two portions of fresh fruit.
Oat products have been shown to help lower high blood cholesterol concentration (hypercholesterolemia) and thereby reduce the risk of arteriosclerosis and also
Products made from whole oat and wheat grains are rich in fibre and essential trace elements. Some types of nuts (especially hazelnuts) are rich in omega-3 fatty acids, which are associated with many health benefits, including the development of the nervous system.
All this makes the Chocolate-Muesli bar a very healthy combination to indulge in ,especially for the growing children and also the Mom’s to be. These can be given in lunch box or after play in the evening or to satiate the hunger pangs.

Ingredients for Chocolate Muesli Bars
300gms dark compound
125gms Muesli
2 tbsp unsalted butter
Method
Break the dark compound into small pieces and melt it on a double boiler.
Mix in 2 tbsp butter and Muesli. Mix properly.
Spread a parchment paper on a baking sheet.
Using the curved part of two spoons spread the mix into a bar shape on the paper. You can make round shapes also which I made a few.
Then even the sides and top surface as much as possible using the plain side of the spoon.
These bars do not have a smooth finish so don’t panic.
Refrigerate for 1 hour or keep in the freezer for 15 mins.
The bars are ready to serve. The bars have a nice crunch because of the Muesli . One can use milk chocolate or a mix of milk chocolate and dark compound. As we like the bitter version, I have used only the dark compound.

Healthy Wheat Chocolate

The word chocolate brings water to every ones mouth. I believe there are very few people who do not like eating chocolate.My kids too are very fond of chocolate. My elder one was unable to to eat this divine thing for the last one year because of his braces. Recently he has come out of it and I thought of treating him with loads of home made chocolate.
Adding wheat to the chocolate not only adds to the nutritive value but it gives a different texture to the chocolate.Wheat flour is a rich source of carbohydrates, dietery fibre, Vit.B , folic acid and Calcium.
Growing kids need Calcium for their bones and teeth. Calcium is important in attaining peak bone mass,which is achieved in adolescence. Low peak bone mass increases the chances of Osteoporosis later in life. Children aged 4-11 years need 800-900 mg of Calcium every day and adolescents need 800-1200mg of Calcium. I found this a good way of introducing Calcium in their diet in a very tasty way. Even bottle gourd is a rich source of Calcium but try giving that to kids .....what say?
I would like to mention that unlike the normal molten chocolate this chocolate is not that easy flowing as it's cooked , so putting it in small moulds is a bit tedious and does not yield perfect shape. Spreading it in a flat dish and then cutting it like a burfi is much simpler ( which I did in the last when I got bored pouring in the moulds ).
Ingredients
2 small cups whole wheat flour
3 small cups sugar
1 small cup unsalted butter
1 small cup cocoa
1 small cup milk powder
2 small cups mixed dry fruits(chopped into small pieces)
Method

  • Dry roast the wheat flour on low flame /microwave till it's light brown in colour and produces the roasted fragrance.
  • Let the flour cool then sift it 3 times along with the milk powder and cocoa pwd so that it gets mixed thoroughly.
  • In a non stick pan take sugar and pour water enough to immerse it.
  • Put in on fire and when the sugar dissolves add the butter.Now add the wheat flour mix gradually to the sugar syrup and mix continuosly so that no lumps are formed.
  • When the entire flour has been added and mixed and it starts thickening and leaving the edges mix the dry fruits (I used raisin,walnut and cashewnut), remove it from the flame and immediately pour it in a greased plate or moulds.Do it fast as the mix hardens quickly.(Removing the chocolate from the mould is a little tedious).
  • Chill it in the refrigerator for an hour or till it sets.
  • Makes amout 35-40 chocolates.
Tips
  • Be careful about the moisture content in the atmosphere as milk powder absorbs that quickly.
  • Take the room temperature also into consideration while making the chocolate as it deforms easily in hot climate.
  • In case of using moulds use large ones.

Nigella lawson’s -Chocolate Pistachio Fudge


  • I started my blog and posted a few recipes and then I could not post for a few days as I left for an unplanned holiday .



    Now that I am back I want to post a recipe that’s very special and close to my heart. This I saw the first time on Nigella’s show and then Deeba @ passionateabout baking posted it and I was hooked to it.



    When I saw it the very first time I was wondering is it that simple? !But when Deeba also mentioned the same thing... I thought let me give it a try. I made it for S’s birthday as he is very fond of dark chocolate. He loved it and has asked me to make it for all his birthdays in future. Helps me as it’s so quick to make and really chocolatee .


    Ingredients
    Dark Chocolate- 350 gms (broken roughly)
    Condensed milk- 400 gms
    Salt -a pinch
    Butter – 1 tbsp
    Pistachio – 150 gms (lightly roasted and pounded)

    Method

    Take a heavy bottom pan, in it put all the ingredients.
    Put it on a low flame and let the chocolate melt.
    At no point during the entire process of cooking the chocolate should boil.
    Keep mixing and cooking on low flame till the mixture thickens.
    The condensed milk helps give the dish a fudge like texture.
    Pour the mixture into an aluminium foil tray, as it’s easy to remove from it.
    Let it chill for 2 hours and then cut into pieces.It makes about 60 pieces of the lovely , chewy fudge.
