Ingredients required are:

3 cups of boiled Pasta

1 large bay leaf

5-6 basil leaves

2 cloves of garlic

1 big onion

6-7 bishop seeds

Salt to taste

1 onion

1 tomato

Capsicum

Olives

Cheese

? cup of Vinegar

Procedure

Cut the top of the tomato and separate the pulp with seeds and tomato.

Add the separated pulp to a mixer grinder. To this add bay leaf, basil leaves, garlic. Onion, bishop seeds, salt and ? cup of vinegar.

Beat the ingredients till a fine paste is prepared.

Chop the other onion in fine size.

Cut the tomato in the cubes.

Dice the cheese in cubes.

Finally a big bowl, add the grinded paste.

To this add the boiled pasta. Later on add the cut vegetables.

Finally add olives.

With a spatula, mix the solid ingredients well with the fine paste.

Add a few cilantro leaves and olives to garnish.

The last step is to refrigerate the prepared dish for 30 minutes.

After 30 minutes, serve the cold pasta and enjoy the delicacy. This pasta is most favored form of salad. If you like oregano, you add it while preparing the paste.

Dum Parwal ( Pointed Gourd) & Flax Seed Flat Bread | Lunch Combo |

Hi!!
It was about 3yrs back, I was entering a new territory, a new job with new surroundings, new colleagues, new targets and pressures. I used to feel lost at times and my best friend in that hostile situation used to be the library, where I could spend a decent time reading various books, either work related or even others too.
Apart from the personal time that I used to spend in the library, I had to compulsorily use three quarters of an hour on records in the reference section. The reference section had books of all kinds, from literature and history to modern technology. And amongst all these books were a few cookbooks too which I could not touch during my officially allotted time but on other days, I could use them.
There were books on Cooking as a science and few cookbooks in the reference section. Amongst, all these books related to cooking, my favorite book was Nita Mehta’s Vegetarian Curries. This book has very nice collection of veg curries made using day to day spices. These are regular veggies cooked with a difference but no elaborate steps to follow. I started noting down recipes from the book into my diary and thought that I would try them one by one. But my job became very hectic, the day to day cooking itself had become very difficult for me but I managed somehow..and then one fine day we got our transfer orders and I had to quit my job and move..
Till recently, the recipes and my diary took a back seat for one or the other reason, one can see that from the number of blog posts per month. But about a few weeks back when I was cleaning book shelves, I landed on my old diaries and I started flipping through the pages, that’s when I landed on the recipes I had copied from Nita Mehta’s cookbook.

I was too tempted to try them at once and this particular recipe using the Pointed Gourd (Parwal) had taken preference as it used a pressure cooker for the ‘Dum Cooking’ making it a faster cooking method. Moreover, this particular recipe didn’t ask for any grinding or any exotic methods to try. The only thing required was chopping and thanks to my decent knife skills, I manage that well.
To go with the curry, which I realized might turn out a semi thick curry, I wanted to make a healthy flatbread. Recently, during a discussion on FB, a blogger friend asked what she could do with flax seeds and I had suggested that she could add it in the regular chapatis/ phulka. After mentioning her that I castigated myself as I also had a packet of the flax seeds which I had been postponing to use. I decided to use it immediately and it so happened that I also knew exactly what to cook with it..This was a recipe which had made a mark in my brain with it’s sheer simplicity and health benefits. It’s a recipe that I had read in Madhu Gadia’s The Indian Vegan Kitchen.

I must tell my readers here that the curry is not a vegan preparation but the flatbread is. The combination of the curry and flatbread turned out simply superb. My family enjoyed the lunch and S was simply happy with the preparations and the combo. The flatbread is good with the health benefits of flax seeds. What more do I need, a smile from the family after eating a hearty meal, that’s my bonus, that’s my increment.

Preparation Time: 15mins | Cooking Time: 20mins | Serves: 3-4 | Difficulty Level: Easy


Ingredients For Dum Parwal ( adapted from Nita Mehta’s cookbook)

5-6 Pointed gourd ( parwal) tippped, lightly peeled and cut into halves
4-5 baby potatoes, peeled or 1 potato, cubed
2tsp freshly made ginger garlic paste
2tomatoes, chopped finely
1large or 2medium onions, sliced
1/2 cup yogurt, smoothened
2tbsp oil + 2tbsp clarified butter (ghee)
1/2tsp cumin seeds
Dry spices:
1mace leaf (javitri) powdered
1tbsp coriander powder
1-1/2tsp chili powder
1/2tsp turmeric powder
1/2tsp garam masala powder
Whole spices
2-3 cloves
1bayleaf
2-3 black cardamom
2-3 small pieces of cinnamon

Method

Heat the oil and ghee together in a pressure pan and fry the pointed gourd and potatoes lightly, to a golden color.
To the remaining oil, which would be around 3table spoons, tip in the cumin seeds. Once the seeds crackle, add the whole spices. Do this process on a medium flame else the hot oil burns the spices.
Add the ginger-garlic paste and sauté to remove the raw smell. Add the sliced onions and sauté till golden in color.
Add the tomatoes and salt to taste. Cook till tomatoes are done. Add the dry spices and cook for a minute.
Remove from the fire and add the beaten yogurt and mix. Put back on fire and cook on low heat till the oil separates.
Tip in the garam masala and mace powder.
Add the fried veggies and a cup of water.
Pressure cook up to a whistle.
Let the pressure drop and then check for the consistency of the curry.

Preparation Time: 5mins | Standing Time: 10mins | Cooking Time Per Roti: 1min | Makes:8-10 | Serves: 3-4 | Difficulty Level: Needs Skill

Ingredients For Flax Seed Flat Bread ( adapted from Madhu Gadia’s Cookbook)

1-1/2cups whole wheat flour
1/2 cup besan (Bengal gram flour) or Soya Flour
2-3tsp flax seed meal
water to knead
1/4tsp salt
2-3 drops oil
wheat flour for rolling

Method

Make a soft dough using the ingredients, apply oil and let the dough rest for 10mins.
Divide the dough into 8-10 portions. Make balls and flatten them.
Using dry wheat flour, roll the roti into a thin disc.
Cook it like a regular roti on a griddle and puff it directly on the flame.
Apply clarified butter on the flatbread/rotis (optional) else apply oil lightly. This keeps rotis soft for a longer time.
Serve hot as these flatbread/ rotis might become dry after sometime.

Make sure the omelette doesn't get browned.Cook till the omelette is done, transfer it to a serving plate and garnish with the chopped tomatoes and green onions. Coup de gueule d'un de nos lecteurs

Stop la sur-motorisation de la plage !
 Je surfe régulièrement de bonne heure à la plage de l'Horizon (que tout le monde appelle "Petit Train") et je remarque que de plus en plus de 4x4 sillonnent le bord de mer chaque matin (mais aussi dans la journée).
 Je ne doute pas de la nécessité de (plus en plus de) ces "professionnels de l'industrie du tourisme" à recourir à de pareils engins. Cependant, à l'heure où toute la Presqu'Île roule à bicyclette, le balai incessant de ces engins motorisés trouble quelque peu ces incomparables instants de sérénité que goutent de bonne heure à l'océan surfeurs, pratiquants de yoga, pêcheurs, joggers et autres promeneurs matinaux. (et moi, donc..).
 Sans parler du tableau digne de "Mad Max" de tout ce déballage de ferraille laissé à la vue de tous aux "heures de pointes" : tamiseuses abandonnées dans la dune le matin, chariot des jets ski des sauveteurs sur la plage, pick-up de l'entretien, jeeps pourries des personnels des snacks, tout cela offre, en plus des traces sur le sable digne des pistes du Paris-Dakar, un spectacle mécanique pas tout à fait en harmonie avec ce que nous apprécions au Ferret : une Nature préservée dans un environnement paisible.
Se donner les moyens de veiller à la propreté et la sécurité de la Presqu'île, OUI, la transformer en autoroute, NON !
 Chacun semble abuser de son petit privilège en parcourant la plage dans sa longueur, quitte à slalomer entre les serviettes comme ce fut le cas samedi dernier pour ce 4x4 blanc des Eaux et Forêts (qui avait surement une inspection urgente à faire en ce samedi matin 10h30 !).
D'autre trouvent sans doute plus confortable (et agréable) de longer la plage plutôt que de remonter la dune et reprendre la route...
 Pollution sonore, visuelle et écologique, risques réels pour la sécurité (ledit 4X4 blanc suivait "la piste" des traces des précédents véhicules et m'a évité au dernier moment...) et que dire du message que cela renvoie aux estivants sur le "respect" de la Presqu'île ?
 N'est-il pas temps de ramener tout ce petit monde à la raison ?

Springtime pasta dish

Ingredients required for the pasta dish:

Penne - 400 gramsShredded kale - 200 gramsChopped bacon - 100 gramsFinely sliced red onion - 1, mediumSoft cheese - 100 gramsGrated parmesan for serving

Preparation: In salted water, boil the pasta. In the last 2 minutes, add the kale and then drain it. Reserve a little of the cooking water. Meanwhile, in a non-stick pan, dry fry the bacon till it turns crispy. Take it off from the pan and then drain off the fat. Leave behind about one teaspoon of fat. Fry the onion gently in the fat for 3 minutes till it becomes soft. Into the pan, tip the kale and the cooked pasta. Then, stir in the cheese and the bacon. If the mixture is dry, then add a little bit of the pasta cooking water. Serve the dish in a bowl, scattered with grated parmesan, if you prefer.

Asparagus cream pasta

Ingredients:

Asparagus - 1 bunchDouble cream - 142 millilitrePeeled garlic cloves - 2Half shaved, half grated parmesan - 50 gramsTagliatelle - 250 grams

Preparation: Cut off the woody ends of the asparagus to prepare them. Then you should neatly cut the tips off from the stalks. Keep the stalks and the tips separately. In a saucepan, bring the garlic and cream to z boil. Remove it from the heat and take off the garlic and keep it aside. In the boiling salted water, cook the stalks for 5 minutes till they become tender. Drain them and then add them into the cream along with the grated parmesan. Whisk with a hand blender till it becomes smooth. According to the instructions on the pack, cook the pasta and then add the tips towards the last 2 minutes of the cooking time. Reheat the cream gently. Drain the pasta and then add it into a bowl along with the cream. Toss them till all is mixed well. Divide into pasta bowls. Before serving top it with parmesan.

Hi All!!

It’s been about two years now that I’m off a full time job. At times I do feel that my monetary contribution to the family is very less as compared to my husband, who works really hard to run this family but when I see that I’m able to feed the family with a variety of food, take care of house hold chores, paying all the bills and many more things which are not even noticed, all those negative thoughts are thrown out of the mind. And the most important contribution which  I feel is, that I’m able to connect with the kid, give him time.

My younger kid who has just entered his teens is a lonely kid these days, with no company for him in the society we live… I’m his person. The minute he enters home after the school, he wants to be with me. He has to tell me what happened in the school, which friend did what, what subjects they studied, which movie they watched during break, who ate his lunch box and the comments his friends gave for the lunch box..

 

Apparently the kid’s lunch box is quite popular amongst his friends and they look forward to eat his food. My kid told me that his friends say that ‘your Mom makes excellent food dude’. He feels proud of his Mom and is glad that I cook good food and give him tasty lunch box. All these small compliments that I receive, they keep me going and I thrive to try new varieties and improve my culinary skills.

With the onset of teenage, the kid has his mood swings and is turning to be a fussy eater. Unlike earlier, he is more fond of Pizza, burger, nachos and all kinds of fast food and my attempt is to sneak in nutritive food in the so called junk food.. But I’m glad he is fond of parathas, so end up making a variety of those, these days. In one of his demands he said that you don’t make anything fried these days…Hmm, I agree to that, I thought…So, today it’s been cloudy mostly and it was a  perfect weather to eat fried. Every time it has rained, I’ve been mentioning to S that it’s perfect weather to make fritters. Finally, today I made a fritter, the recipe of which has been adapted from a book called Indian Home style Cooking by Sushma KK. Again, it’s a rarely seen book these days, which again, I had picked at Reliance Time Out, Gurgaon. The pictures are not so great in the book but the recipes are..

This particular recipe is again without any ginger, garlic or onion. Perfect for Chaturmaas. It can be good tea time snack, a good starter for parties and even for lunch box too (sometimes)..

Preparation Time:30mins | Frying Time: 5mins/batch | Makes: 20-24 | Serves: 4-6 | Difficulty Level: Moderate

 

Ingredients

4raw bananas, boiled

1potato, boiled

3-4green chilies, finely chopped

1-1/2tbsp cashew nuts, finely chopped

1/2 cup mini sago, soaked and drained

2-3 bread slices, crushed

1tsp, red chili powder

a few sprigs of chopped coriander

1-2tsp amchoor ( dry mango powder)

1tsp garam masala

Method

Soak the mini sago in water for half an hour and then drain the water completely.

Boil the raw banana and potato. Cool and peel.

Take the soaked sago in a bowl, add the chopped cashew nuts and chopped green chilies.

Add the chopped coriander.

Crush the boiled potato and banana and mix with sago.

Add all the dry spices and salt to taste. Check the consistency of the mix and based on that add crushed bread slices ( I added two).

Take lemon sized mix, flatten it and make a hole in the center. Deep fry on a medium flame, till golden in color. Remove on kitchen towel.

You will need frozen banana; 2 tbsp (30 mL) good quality tahini; 3/4 cup (175 mL) water; 1 tsp (5 mL) vanilla; and 1 tbsp (15 mL) cocoa powder. Now place all these ingredients in blender, blend well, and serve immediately.

Next, let's learn how to make Apple and Swiss Pizza.

You will need: 3 tbsp (45 mL) pizza sauce; 5 tbsp (75 mL) apple sauce; Salt and freshly ground pepper; 1-16" pizza crust (40 cm), pre-baked; 1 small red onion, minced; 1/2 lb (225 g) Canadian Swiss cheese, grated; 2 tbsp (30 mL) fresh chopped parsley; 2 tbsp (30 mL) olive oil; 2 tsp (10 mL) cider vinegar; 1 apple, diced; and 2 cups (500 mL) baby spinach cut into strips. First combine pizza sauce with apple sauce and season them. Next, spread out the pizza crust and use the minced onion for garnishing. Mix parsley with cheese and sprinkle the mix over pizza. Bake the pizza on the middle oven rack for about 5-7 minutes until the cheese turns golden. You may serve immediately or let it cool for a while before serving. Cutting into bite-sized pieces is a good idea. You add color and flavor to this appetizer by the following step. Mix olive oil and vinegar. Add apples and spinach, season them and toss well. Spread this yummy paste atop chilled pizza pieces or as a side dish for dipping.

The last of our fashionable appetizer recipes today is Baked Egg Rolls.

You will need 1 lb (454 g) lean ground pork; 3 green onions, minced; 2 minced cloves of garlic; 1 carrot, grated; 1/2 cup (125 mL) chopped water chestnuts; 2 tbsp (30 mL) soy sauce; 1 tbsp (15 mL) cornstarch; 1 tsp (5 mL) sesame oil; 1/2 tsp (2 mL) pepper; 12 large (5 1/2 inch/13 cm) egg roll wrappers; and 1 tsp (5 mL) vegetable oil. In non-sticky cookware, cook pork over medium heat until no longer pink for about 5 minutes. Now drain off the fat. Add onions, garlic, carrot and water chestnuts. Cook further over medium heat for about 3 minutes. Take a small bowl and whisk together soy sauce, cornstarch, 1 tbsp water, sesame oil, and pepper. Pour the mix into a pan and toss well. Let the mix cool down a bit. Now you need to prepare the rolls. Make 1 roll at a time. Place wrapper, brush it with water, and put the pork-mixture leaving about ½ inch (1 cm) border on all sides. Roll the wrapper and pinch ends to seal. Brush the wrap with oil and bake in oven at a temperature of 375? F (190? C) for 20 minutes until the roll turns golden and crisp. To add extra zing to your rolls, serve them with plum sauce and salad.

Hi All!!

I love watching cookery shows, I can spend hours watching them if I have free time in hand. I love watching Jamie Oliver, Nigella Lawson, Rachael Ray..and the list goes on. Each and every cook has their favorite ingredient, own way of presentation, food styling and I learn a lot from their expertise and knowledge. I pick up so many handy tips. Out of the so many recipes that I must have watched, some get inscribed in my brain and two preparations which had left an impression on me were from NDTV good times, from the state of Himachal Pradesh…The name of the dishes and their location had got imprinted in my brain. I clearly remembered they were was called Madra and  Babroo , both were the preparations from Himachal Pradesh. The Madra/ Madhra is  a recipe famous in Chamba.

If you live in Delhi and you have not visited Ambience mall in Gurgaon, do visit. There’s a Reliance Time Out store there and I loved their collection of books. They even had books which are rarely seen in the market. Other than the  books which are famous world wide, I love reading books which are based on a local cuisine. These books give you an insight to what the cuisine is about and the intricacies and variety of the recipes in the cuisine.

One such book that I loved reading was Bhawanee Singh’s Classic Recipes From Himachal Pradesh, I loved reading the book and the recipes in it. Most of them I had never heard or tasted. For me it was a completely new cuisine and I realized the richness of the recipes while reading them. While turning the pages, my eyes hit on the title which said Madra and immediately the name rang bells in my head. I was now even more curious to read the recipe. I had a faint memory that the dish I had seen on TV had raisins and dry fruits in it but this particular recipe had none, nevertheless, I found the recipe and book interesting but I did not buy the book that time. Finally, just before we left Delhi for good, I bought this book fearing that I won’t get it in the new city and I’m glad that I bought it, as the book is very rarely seen these days..

I decided to try the Madra recipe from the book as the author has lived in Chamba and the recipe is from that region. I read the recipe thoroughly  and soaked the required quantity of Kidney beans overnight, also made yogurt in large quantity. This  is a ginger, garlic and onion free recipe, so even the Jain’s can enjoy and boy..it’s a rich recipe too..laden with clarified butter. The sourness comes from the large quantity of yogurt used in the recipe.

While reading the recipe I also realized that it had no chilies in it, but I could not imagine my curry without the chilies so I did that change and added chili powder. There are recipes which use dry fruits and raisins but I’ve avoided them since this particular recipe didn’t ask for. The madra can be made using the chickpeas/ kidney beans/ black eyed beans but I’ve used kidney beans.

This is a tricky preparation as it needs cooking of the yogurt and if that curdles, the entire dish gets spoilt. So, one needs to be extremely careful while making this dish. When the dish was cooked and I tasted it, I wasn’t too happy as I had not added the chili powder till then and I found it low on salt too. After adding a little more salt to the curry, I liked it to an extent and thought Oh! So much of hard work for not so wow dish, but  I was wrong here, after a few hours when I tasted the curry again, it was great and it tasted awesome the next day. I felt good that the hard work paid off.. The kid loved it so much that he took it in his lunch box too and thought of sharing with his Jain friends in school.

Soaking Time: Overnight | Preparation Time: 10mins | Cooking Time: 1hr30mins | Serves:4-6 | Difficulty Level: Needs Skill

Ingredients

250gms Red kidney beans ( rajmah, I used the small Kashmiri variety)

1tsp turmeric powder

1kg fresh yogurt (this comes to about 750ml milk used to make yogurt), do not use the sour yogurt

1-1/2cups ghee/ clarified butter ( the original recipe asks for 2-1/4 cups)

2sticks dalchini/ cinnamon of 2”each

1/2tsp fenugreek/ methi seeds powdered ( I fried and powdered it)

5-6 green cardamom

4-5 black cardamom

1tsp garam masala

4-5 cloves/ loung

salt to taste

3tsp red chili powder (the original recipe does not use it)

Method

Pressure cook the beans with salt till tender. Drain the water.

Whisk the yogurt till smooth.

Heat a thick bottom pan and melt the ghee, add all whole spices and let them crackle (I read some recipes of Madra online, suggesting use of Mustard Oil).

Remove from flame and add turmeric, followed by addition of smooth yogurt.

Put the pan back on fire, keep on medium flame and continuously stir till the yogurt comes to a boil, this prevents curdling of the yogurt. Even if you feel that the yogurt is curdling, keep stirring, it turns out fine at the end. Else you can add 2tsp rice flour dissolved in water to the yogurt, this prevents curdling ( I did not add any rice flour).

Once the yogurt starts boiling, keep scraping the bottom and sides. One can add a tablespoon of water at intervals to prevent scathing. In about 40mins the yogurt thickens, the color changes to brown and the ghee separates. At this point add salt and chili powder. Mix.

Tip in the kidney beans and mix thoroughly. Also add the fenugreek powder. Pour a little warm water and keep the pan on low heat till the water evaporates.

Before taking the pan off stove, mix in the garam masala and cover with a lid.

Before serving, heat a tablespoon ghee and add a pinch of chili powder and pour immediately on the curry (This was my contribution to the curry).

Serve hot with rice or paratha.

Tips

  1. This recipe needs skill as it’s a yogurt based gravy and needs continuous stirring through the cooking.
  2. It is advisable to add salt after the yogurt has boiled without curdling as salt can cause curdling.
  3. As it’s a curd based gravy, it needs more salt to taste.
  4. Adding rice flour to the curds, prevents curdling and also thickens the curry.
  5. This recipe asks for more ghee but I’ve reduced the ghee quantity.
  6. Addition of chili powder was my choice which can be completely skipped.

Making Frothy Milkshakes

The drink is also known as thick shake or frappe. Some of the restaurants make milkshakes in automatic machines that freeze the shake and serve a premade one consisting of a flavored agent, milk and a thickening agent. But some fast food shops still use the traditional method and offer milkshakes that are made by blending soft-serve ice cream with syrups.

Recipes for preparing milkshakes

Jell-O Milkshake

Ingredients:

Milk - c Jell-O - 1 package of any flavour Vanilla ice cream - 1 pint, softened

Preparation: Place the ice cream and milk in a blender. Add jell-o and blend it for 30 seconds. Your mouth watery shake is ready to be served.

Eggnog Shake

Ingredients:

Eggnog - c Vanilla - 1/4 tsp Vanilla ice cream - 1 scoop Nutmeg

Preparation: Combine the first three ingredients in a blender and mix till it turns frothy. Sprinkle some nutmeg over it.

Cheery Chocolate Milkshake

Ingredients:

Frozen yogurt or vanilla ice cream - 4 spoonsCold milk - 3/4 cChocolate syrup - 1/4 cMaraschino cherries - 3, stems removedAdditional cherry and whipped topping

Preparation: In a blender, place chocolate syrup, milk, ice cream and cherries. Blend it till it becomes smooth. Garnish with cherry and whipped topping.

Vanilla Milkshake

Ingredients:

Vanilla ice cream - 3 spoonsMilk - 1 1/2 cVanilla extract - spoonSugar - 2 tsp

Preparation: Combine milk, ice cream, sugar and vanilla in a blender. Blend it till it turns smooth.

Peanut Butter Chocolate Milkshake

Ingredients:

Peanut butter - c Chocolate syrup - 1/4 c Milk - 1/4 c Ice cubes - 12

Preparation: Combine chocolate syrup, peanut butter, ice cubes and milk in a blender and blend it till smooth.

Jelly and Peanut Butter Milkshake

Ingredients:

Peanut butter - spoon Jam or jelly - 2 spoons (strawberry, grape or raspberry) Milk - 1/2 c Vanilla ice cream - c

Preparation: Combine jelly and peanut butter well and place it in blender. Add ice cream and milk. Then blend it till it becomes smooth.

Whoppers Malt Shake

Ingredients:

Frozen yogurt or vanilla ice cream - 3 spoons Cold milk - 1/3 c Chocolate malt syrup - 3 spoons Whipped cream topping

Preparation: In a blender, place milk, ice cream and chocolate malt syrup. Blend it till it turns smooth. Garnish it with cherry and whipped topping.

Chocolate Shake

Ingredients:

Vanilla or chocolate ice cream - c Whole milk - 1/2 c Chocolate syrup - 4 spoons

Preparation: In the canister of blender, put all the ingredients and blend them till it turns smooth.

Chunky Milkshake

Ingredients:

Vanilla ice cream - 3 spoons Chocolate chips - 2 spoons Banana - 1/2 Instant coffee - spoon Chocolate syrup - 2 spoons Milk - c Vanilla - 1 tsp

Preparation: For one minute, blend everything on medium speed.

Chinese Influence On South-East Asian Cuisine

South East Asia measures nearly two million square miles across, holds a population of over 600 million people and includes 10 different countries. Yet if you look at the noodle soups of Vietnam or the fried rice found in Singapore, there's one thing that these cuisines all share - influences from Chinese culture, something that chefs at School of Wok make it their job to know a lot about.

This influence of Chinese culture in no way means that each country and region does not possess it's own unique traditions and flavors with their own cuisine, but it's undeniable that you can see elements of Chinese flavors and techniques wherever you look.

Woks, which originated from the Canton region of China, are the most common and versatile of the cooking utensils used across SE Asia, in which foods can be stir-fried, steamed, deep-fried, braised or even smoked. In fact, the Chinese are said that have brought their stir-frying methods to the rest of the continent as merchants traveled across the region for thousands of years.

As for the food of SE Asia, rice and noodles, now fundamental ingredients across the region, were originally Chinese foods that later found their way into kitchens further south. These ingredients are now considered to be staples across the whole region, and take their place among national dishes of many SE Asian countries - such as Vietnam (Pho), Thailand (Pad Thai) and Malaysia (Nasi Lemak).

Furthermore, the cuisines of the South East would be completely different without soy sauce, which was invented in China sometime between the third and fifth centuries. The influence of Chinese culture on the rest of SE Asia can be plainly seen through the use of this indispensable condiment with the majority of meals using it in one way or another.

More recently as example of Chinese influence, dim sum, unarguably a Chinese invention, has spread across the continent with steamed buns and boiled dumplings being served across the region, updated with each country's individual twist.
