Nigella lawson’s -Chocolate Pistachio Fudge

  • I started my blog and posted a few recipes and then I could not post for a few days as I left for an unplanned holiday .

Now that I am back I want to post a recipe that’s very special and close to my heart. This I saw the first time on Nigella’s show and then Deeba @ passionateabout baking posted it and I was hooked to it.

When I saw it the very first time I was wondering is it that simple? !But when Deeba also mentioned the same thing... I thought let me give it a try. I made it for S’s birthday as he is very fond of dark chocolate. He loved it and has asked me to make it for all his birthdays in future. Helps me as it’s so quick to make and really chocolatee .

    Ingredients
Dark Chocolate- 350 gms (broken roughly)
    Condensed milk- 400 gms
    Salt -a pinch
    Butter – 1 tbsp
Pistachio – 150 gms (lightly roasted and pounded)

    Method

Take a heavy bottom pan, in it put all the ingredients.
Put it on a low flame and let the chocolate melt.
At no point during the entire process of cooking the chocolate should boil.
Keep mixing and cooking on low flame till the mixture thickens.
The condensed milk helps give the dish a fudge like texture.
Pour the mixture into an aluminium foil tray, as it’s easy to remove from it.
Let it chill for 2 hours and then cut into pieces. It makes about 60 pieces of the lovely , chewy fudge.

    APPLE JAM

After my first three spicy posts I thought let me add some sweetness to the blog. My last post was my younger ones favorite , this post is my elder ones favorite who has a sweet tooth. He can finish a bottle of it in no time and sometimes I have to hide it fearing he would upset his stomach....Nevertheless ,inspite of all the precautions I take ..the kids are very smart and would locate and finish it.
My kids have an obsession for home made things . Anything new I try they are very encouraging and will give their thumbs up..and that motivates me to experiment more. This Jam is also one of the things I tried making for them , simply for a reason that it's much healthier when made at home and a good way to use fruits .

    Ingredients :

4 Apples - Cleaned, peeled and cut into small pieces

    1 cup water

    1/4 tsp citric acid

    3 small bowls sugar

    KMS-1/2 tsp

a pinch of red food colour

    Method:

In a pressure cooker steam the chopped apples with a cup of water and citric acid till the apples are tender. Mash the apples . In a thick bottom pan take the apple pulp(it was 4 small bowls), add the sugar (*the proportion is for 4 cups pulp, add 3 cups sugar). Cook till it becomes thick and it forms a drop. Put a drop in a separate bowl of water , if it does not disintegrate the Jam is done. Add KMS -1/4 tsp (this helps to preserve the Jam) and red colour 2-3 drops. A very glowing Apple Jam's ready.

TRADITION.

    Kadhai Paneer

I was late to enter my kitchen for cooking lunch and the younger one demanded Paneer(is ready to eat any time of the day). Was in no mood to make an elaborate recipe as the kids were hungry . Made this Kadhai Paneer in a matter of few minutes.

    Ingredients:

    Paneer-300 gms
3 medium sized onions (grated or finely chopped)
    1 onion sliced
    1 capsicum cut into fingers
3 medium sized tomatoes (finely chopped)
    5-6 large pods garlic (crushed)
    1 inch ginger (crushed)
1tbsp fresh coarsely pounded coriander seeds
    2 dry red chillies
    1 small spoon garam masala
3 small spoons kitchen king masala
1 small spoon red chilli powder
    1 small spoon turmeric powder
    oil /butter to cook
    salt to taste

    Method:
Heat oil ,put red chillies ,followed by the chopped onions(I used my hand mixer).. saute till light brown in colour, add ginger and garlic and saute till cooked ,then add tomatoes and salt . Cook till the oil separates.. now add the spices one by one and the masalas.Cook till the spices produce their aroma, add 1/2 cup water and cook for a min. This is a dry dish , adding water at this stage ensures that the dish does not become too dry. Now add the sliced onions , saute for a min and put in the paneer and toss it gently and cook for 3-4 mins then add the capsicum and cook it till its half done. Do not overcook.

    SHAVAGE UPMA (VERMICELLI UPMA)

In those rush hours of the morning when every one’s in a hurry, I have to make something which is quick to cook, is healthy and filling. I often land up making this Upma as it can be made every time with different variations ...which could be either the spices or the veggies. I find it the best way of making a nutritive breakfast by adding more veggies to it.
But this time I made it when kids are enjoying their holidays and I enjoy my lazy mornings(one needs simple dishes then also :) ) . I made a very simple version of this and to my satisfaction the kids liked it and asked for a second helping.
    The recipe goes like this
    Ingredients:
    2 cups vermicelli
    2 medium sized onions (chopped)
    1 large tomato-chopped
1 small carrot chopped (one can add his/her own choice of veggies)
    5-6 finely chopped green chillies
    2 tsp lemon juice
    few curry leaves
    1 tsp mustard seeds
    a small handful of peanuts
1 tbsp mix of chana and urad dal
    6-7 tbsp oil
    2 dry red chillies
    1/2 tsp turmeric powder
    1 tsp chilli powder(optional)
    2 cups boiling water (approx)
    salt to taste
    METHOD:
Heat oil and mustard seeds , once they crackle ..add the dal mix followed by peanuts , green chillies , curry leaves and red chillies. Saute till the peanuts are properly fried. Now add the onions and carrots saute for a minute and then add tomatoes . Add the salt and cook till tomatoes are tender ..now add the remaining spices and mix ...add vermicelli and toss it properly in the spice mix. Add the lemon juice and gradually add the hot water (if you find this method difficult ..cook vermicelli as per the instructions on the pack and then add). Bring the water to a boil and then cover and cook on a low flame till the vermicelli is done . Garnish with coriander and serve with curds.

My First Post- Maavinkayi Chutney ( Raw Mango Chutney )| Karnataka Cuisine

    DSC_3807-001

It has been a long wait for me..in a sense that I waited too long to start my own blog. I must thank my SIL G and my husband S for this ! I am still not adept with all the skills of blogging but still want to give it a try. It's truly a dream come true! All these days I would read food blogs and used to feel mesmerized with the wonderful posts and pictures. I am still a novice and will try to match up with all you wonderful people out there and hope to get your support too.

I was debating whether my first post should be a sweet or a savory...eventually I decided on picking up a fruit which is abundantly available in the market now....Mango. I dedicate this recipe to my affectionate MIL who very kindly taught me cooking the Kannadiga way.... This is her recipe and S loves it . I have made this the very first time and it was an instant hit at the dining table , S saying it’s 10/10. The recipe is very simple and quick to make and the feedback was superlative "it's yummy"!!! So here it goes..

    DSC_3823-001

    Preparation Time:10mins

    Cooking Time: 5-6mins

    Serves:4-6P

    Difficulty Level:Easy

    Ingredients :

4-5 raw mangoes ( peeled and grated)

    15-20 Bedagi red chilli

    1tsp fenugreek seeds( methi dana)

    salt to taste

    2tsp Mustard seeds

    Method :

Heat a spoon of oil and fry the fenugreek seeds and remove. To the remaining oil add the red chilies and sauté till crisp (use low flame). Now grind together the mango, fenugreek, chilies and salt (this needs a little extra salt , mango being very sour).

Heat 6-7 tsp oil ,add mustard seeds and asafetida followed by the mango paste . Sauté it for 4-5 mins and its done.

This chutney is mixed with rice. Raw groundnut or sesame oil is added on top. Refrigerate it for further use.

    LÈGE-CAP-FERRET.
Le futur PLU devra mieux respecter l'environnement

Michel Sammarcelli, Bernard Wagon et Françoise Gross. (photo A.P.)
