Buckwheat and Colocasia Dosa

P1030621
Hi!
Sunday started off in a great way as I made one of my best impromptu preparation till date using the buckwheat. I know good ways to consume the buckwheat but making a dosa never came to my mind till yesterday and was elated by the end result. To add to my elation S took me out for shopping and I shopped and shopped till I dropped, after returning home watched 3 Idiots again on Sony TV while eating a Cheese Burst Pizza.
Coming back to the Dosa I made, I never realized that buckwheat can yield such a perfectly textured dosa . I love the earthy flavor of buckwheat and truly enjoy it’s health benefits. While many people think that buckwheat is a cereal grain, it is actually a fruit seed that is related to rhubarb and sorrel making it a suitable substitute for grains for people who are sensitive to wheat or other grains that contain protein glutens. Buckwheat flowers are very fragrant and are attractive to bees that use them to make produce a special, strongly flavored, dark honey.
The Buckwheat has huge health benefits, it’s lipid-lowering activity is largely due to rutin and other flavonoid compounds. The nutrients in it help control blood sugar and improves blood flow thus helping prevent heart problems. The versatile food is a possible probiotic,a carbohydrate that prompts the growth of “friendly” bacteria in the digestive tract. For a detailed read on it’s health benefits check here. How to proceed for the Dosa, read further..

For My 150th Post, Wrapped Up..Grilled Veggies and Couscous in Aioli Dressing

P1030590

Hi friends! I feel elated typing this post as I cross another landmark. For this, I decided to share a wrap which I am very fond of and is surely very very tasty and healthy too.

Mocha is a favorite hangout place for me and DH and we keep exploring their menu every time we visit it but this wrap has surely become a regular order. It was after reading the description in menu card that I learnt about the aioli dressing and wanted to give this a try. The aioli dressing as I have understood is a French dressing for salads and meat. It is garlicky, creamy and like mayonnaise is an emulsion of oil and oil  soluble compounds in water and water soluble compounds.

To make the wraps my first hurdle was to get hold of Couscous which is not so easily available here, gladly my good old INA market came to my rescue. For a foodie this market is a must to visit. Working with couscous is a child’s play, they are so easy to work with that it does not need any detailed explanation.

The next step was convincing S to by a grill pan (actually it’s a steak pan but grills excellent), to my delight after 2 years of pestering I eventually bought it  a few days back.

P1030545

Once I had this there was no looking back I had to make this wrap. The original recipe asks for char grilled veggies but I was happy by grilling my veggies on this pan, since it’s a cast iron pan it gave a nice rustic, burnt and smoky flavor to the veggies.

There are many aioli recipes available on the net. I read many and then suiting our taste buds concocted mine. This was my first attempt to make this dressing so with all apprehensions in mind I made this and was extremely happy with the result.

I also made whole wheat tortillas at home, yes, I did work hard for this post but during the entire process I was worried how the end product would be. The tortillas are so easy to make if you are used to making thin rotis regularly at home, for me it was an easy task surely and I was mighty happy looking at my tortillas.Open-mouthed

Finally came assembling the wrap, then grilling it and at last dig into it. I was so apprehensive that I served it first to my son and I jumped with joy the minute he showed his thumbs up with the first biteThumbs-up. The taste was as close as I could get to Mocha’s. I patted myself for all the hard work and made a wrap for myself.

So here’s what I did…

Ingredients for Aioli Dressing

1 garlic

2 egg yolks

3/4 tsp salt

1 cup EVOO

1 tsp lime juice

1 tsp cold water

1 tsp crushed whole grain mustard

P1030558

Method

Bring the eggs to rooms temperature and then separate the egg yolks.

Finely chop the garlic and mix it with salt.

Whisk the egg yolks with the garlic.

Add half of EVOO gradually drop by drop while whisking continuously. I used my electric beater for this process. Be careful as the oil needs to get mixed with the water component to form the emulsion. If precaution is not taken then the oil-water components separate.

After adding half the oil add  lime juice, water and beat. After this stage the oil can be added in more quantities and keep whisking.

The end product’s a thick, viscous, garlic flavored emulsion which can be used as a dip or dressing.

Ingredients For Whole Wheat Tortillas

(makes about 13)

1 cup APF

1-3/4 cup whole wheat flour

1/2 tsp salt

5 tbsp oil/shortening

1 cup warm water

P1030572

Method

Mix both the flours and salt. Add the oil and rub and mix to get a bread crumbs like texture.

Add water gradually and knead a dough which is soft but not as soft as a bread dough.

Cover it with a cloth and let it stand for an hour.

Divide the dough into 12-13 parts and then give each part  a ball shape.

roll each ball on a floured surface into thin 7inch circles.

Heat a griddle and roast the tortilla lightly on each side on  a medium high flame. Turn immediately as light blisters appear.

Do not over roast else they will turn crisp.

Sour Cream and Banana Cake

P1030520
Hi friends!
The God has been kind today as it rained through the night and the sun has been shadowed through the day. Yesterday, I mustered up all my inner strength to clean up the refrigerator (yes, I hate doing that) but saying that, this cleaning process is always an eye opener for me the hoarder, who does not realize what all has been stocked and tend to overlook many a things.
This cleaning process showed me that the box of sour cream  that I had very fancily picked up was going to expire and the bananas in the shelf were already crying and calling me. I wrote on my fridge pad, sour cream to be used immediately, a gentle castigation to myself.
As I said that the God was kind and the temperature had dropped, this helped me, like a sane person I started  looking out for a recipe using both the sour cream and the banana so that I could consume both but the cool temperature motivated me further to bake, yes, I agree I have not baked in a while. So, the motivated me explored many recipes of sour cream cake and taking clues from them concocted my own.
I removed all the ingredients kept in refrigerator to bring them down to room temperature in the morning itself and then by afternoon after finishing my chores I was all set to bake.
The cake is quite a hassle free version which needs initial beating of butter, sugar followed by eggs then light mixing with flour and sour cream followed by folding the banana and dry fruit and then finally baking. That’s it. It needs an hour  and ten minutes to do all the preparation to then getting the final product. The cake is amazingly soft and a perfect evening snack for children and a tea time cake for all the elders.

P1030523
Ingredients
1 cup sour cream
1/4 cup butter
1-1/3 cup sugar
2 cups self raising flour
1 tsp baking soda
1 tsp vanilla
2 eggs
1 cup mashed banana (2 bananas)
1/2 cup chopped walnuts (optional)
Method
Preheat the oven at 350F/175C.
Beat the butter on high. Add sugar and beat again. Add an egg at a time and beat.
Mix the self raising flour and baking soda. Alternating with sour cream add the flour to the butter-sugar mix.
Mix some flour to the chopped walnuts and fold in the mashed banana and walnuts to the cake batter.
food6-12
Bake in a ten inch spring form tin for 45-50 mins/ till done. Use a toothpick  and insert it in the centre of the cake, if it comes out clean, the cake is done.
P1030512
Leave it in the pan for 10 mins and then transfer it to a cooling rack and let it cool down.
P1030513
Serve it warm.

No Oil Chana Masala and Instant Whole Wheat- Bread Bhatura

P1030485
Hi Friends!
The food from the state of Punjab is extremely popular throughout India and one can find many restaurants catering to this world famous cuisine. I am sure everyone  is fond  of the world famous combo food Chana-Bhatura but as it’s high on oil and calories we eat that once in a while.
Today I share this extremely popular combo food recipe cooked in my style and in a healthy way. I guess all Indian food blogs will surely have the recipe to this, so one might ask, what’s new here?
New is that, I have still not read any one contributing to a NO OIL CHANA, yes this recipe has absolutely ZERO OIL but is high on taste and one surely does not miss out the oil factor.
I had learnt this recipe from my colleague who is a Punjabi Sikh. She would bring this in her lunch box and we all used to love it. When I had asked her for the recipe, I was shocked and surprised to hear that it had absolutely no oil, as one can’t make out that difference. I found it a very unusual recipe, very healthy, low on calories and still scrumptious….unbelievable, right?!?!  Do try this and then believe it. As for me, as I finished cooking S entered the kitchen saying, “What are you cooking? It’s smelling good” Smile.
A normal bhatura is made with refined flour and yogurt and the process of fermentation takes 3-4 hrs. This Bhatura recipe is my Mom’s. I have repeatedly mentioned that she is a marvelous cook and I still can’t match the speed with which she cooks. My Mom uses bread which has natural yeast in it so it helps fermenting fast and the bhatura can be rolled in half an hour after the dough is kneaded.
I have always found Bhatura made in this  way is crispy, does not soak the oil  and also  it does not turn chewy on becoming cold unlike the regular bhaturas. One can make this completely with refined flour but being a health conscious Mom I replaced the Apf largely and made a whole wheat version.
The Combo made in this fashion becomes a healthier substitute to the normally high fattening version. So next time you are scared on binging chana-bhatura try my method and you will never regret.
Normally after eating Chana-Bhatura for lunch I would have skipped my dinner too, as I find it very heavy to digest. But today with this version I was hungry by 4 PM to have some snacks. This version is surely easy to digest and light on the stomach.

a tsp salt salt
a pinch of cooking soda
spices
3 black cardamom
a cinnamon stick
3-4 green cardamom
6-7dry amla/gooseberry pieces
Fresh Whole Spice Masala
1-1/2 tsp carom seeds/ajwain
3-4 tbsp coriander seeds
3 tsp cumin seeds
2 tsp rock salt
1 tsp white pepper pwd
2 tsp red chili pwd

1 tsp ginger pwd
& like I said – NO OIL Thumbs-up
Method
Soak Chana/garbanzo overnight.
In a pressure cooker take the soaked chana,  cooking soda, salt, green and black cardamom, cinnamon and dry amla. Cook it on a high flame till the first whistle then simmer and cook for 20 mins.
The chana should be cooked soft. When the pressure drops remove the whole spices and amla.
Roast the carom, coriander and cumin seeds. Grind it along with the other ingredients mentioned under whole spice masala.
Add this to the cooked chana and mix properly. Now using back side of the ladle crush some chana. Add a cup of water and cook this on low flame for another 15-20 mins or till the chana absorbs the masala.
Sprinkle some finely chopped onion on the chana and serve hot with the Bhatura.

Ingredients for Whole Wheat-Bread Bhatura
8-10 bread slices
3 cups APF
2 cups Wheat Flour
1 tsp salt
water
Method
Remove the edges of the bread and soak it in water and mash it into a smooth paste ( I used my food processor).
Add the salt and both the flours. Using water knead a soft dough, cover it with a lid and leave it to rise for half an hour in a warm place.
food6-10
Heat oil in a pan (use medium high).
Take a small portion of the dough (as big as ping pong ball).
Grease the dough ball lightly and on a marble slab pat it into a 6inch circle, 3-4 mm thick (Like poori). If you find patting difficult, one can use a rolling pin.
Lift it gently and slide it into the frying pan, check that the oil is not extremely hot, else one can see the bhatura browning instantly.
Using a slotted spoon fry the bhatura and let it puff evenly.
Remove on a kitchen towel.
food6-11
Serve hot with Chana.

Merci d'avance!

Foodles from Horlicks..a product review

P1030343
Hi Friends!
From now onwards product review will be a regular feature in my blog. People living in India might have seen the advertisement of Foodles from today.
I had tried this last week when Horlicks had passed on these samples to S. The name Horlicks brings in a lot of expectation as their health drinks are extremely popular and now after  tasting these Foodles, I can surely say that it’s going to a big success.
I tried the   curry and  ala masala flavors and both are good and the taste different and suitable for Indian palate. Priced at Rs. 15 for 80g pack which is an approachable price for Indian clientele, these are health packed, made with four grains- Ragi, Rice, Wheat and Corn.
Horlicks has surely targeted health conscious parents. It’s a different product made with multi grains, something which Indian market has not seen yet, so will surely attract people. It is a good source of proteins, fats and carbohydrates so is extremely good for growing children.
P1030346
We enjoyed eating them. One pack is good enough for one person’s breakfast, so do try it.
