Sour Cream and Banana Cake

The God has been kind today as it rained through the night and the sun has been shadowed through the day. Yesterday, I mustered up all my inner strength to clean up the refrigerator (yes, I hate doing that) but saying that, this cleaning process is always an eye opener for me the hoarder, who does not realize what all has been stocked and tend to overlook many a things.
This cleaning process showed me that the box of sour cream  that I had very fancily picked up was going to expire and the bananas in the shelf were already crying and calling me. I wrote on my fridge pad, sour cream to be used immediately, a gentle castigation to myself.
As I said that the God was kind and the temperature had dropped, this helped me, like a sane person I started  looking out for a recipe using both the sour cream and the banana so that I could consume both but the cool temperature motivated me further to bake, yes, I agree I have not baked in a while. So, the motivated me explored many recipes of sour cream cake and taking clues from them concocted my own.
I removed all the ingredients kept in refrigerator to bring them down to room temperature in the morning itself and then by afternoon after finishing my chores I was all set to bake.
The cake is quite a hassle free version which needs initial beating of butter, sugar followed by eggs then light mixing with flour and sour cream followed by folding the banana and dry fruit and then finally baking. That’s it. It needs an hour  and ten minutes to do all the preparation to then getting the final product. The cake is amazingly soft and a perfect evening snack for children and a tea time cake for all the elders.

Ingredients
1 cup sour cream
1/4 cup butter
1-1/3 cup sugar
2 cups self raising flour
1 tsp baking soda
1 tsp vanilla
2 eggs
1 cup mashed banana (2 bananas)
1/2 cup chopped walnuts (optional)
Method
Preheat the oven at 350F/175C.
Beat the butter on high. Add sugar and beat again. Add an egg at a time and beat.
Mix the self raising flour and baking soda. Alternating with sour cream add the flour to the butter-sugar mix.
Mix some flour to the chopped walnuts and fold in the mashed banana and walnuts to the cake batter.

Bake in a ten inch spring form tin for 45-50 mins/ till done. Use a toothpick  and insert it in the centre of the cake, if it comes out clean, the cake is done.

Leave it in the pan for 10 mins and then transfer it to a cooling rack and let it cool down.

No Oil Chana Masala and Instant Whole Wheat- Bread Bhatura

The food from the state of Punjab is extremely popular throughout India and one can find many restaurants catering to this world famous cuisine. I am sure everyone  is fond  of the world famous combo food Chana-Bhatura but as it’s high on oil and calories we eat that once in a while.
Today I share this extremely popular combo food recipe cooked in my style and in a healthy way. I guess all Indian food blogs will surely have the recipe to this, so one might ask, what’s new here?
New is that, I have still not read any one contributing to a NO OIL CHANA, yes this recipe has absolutely ZERO OIL but is high on taste and one surely does not miss out the oil factor.
I had learnt this recipe from my colleague who is a Punjabi Sikh. She would bring this in her lunch box and we all used to love it. When I had asked her for the recipe, I was shocked and surprised to hear that it had absolutely no oil, as one can’t make out that difference. I found it a very unusual recipe, very healthy, low on calories and still scrumptious….unbelievable, right?!?!  Do try this and then believe it. As for me, as I finished cooking S entered the kitchen saying, “What are you cooking? It’s smelling good” Smile.
A normal bhatura is made with refined flour and yogurt and the process of fermentation takes 3-4 hrs. This Bhatura recipe is my Mom’s. I have repeatedly mentioned that she is a marvelous cook and I still can’t match the speed with which she cooks. My Mom uses bread which has natural yeast in it so it helps fermenting fast and the bhatura can be rolled in half an hour after the dough is kneaded.
I have always found Bhatura made in this  way is crispy, does not soak the oil  and also  it does not turn chewy on becoming cold unlike the regular bhaturas. One can make this completely with refined flour but being a health conscious Mom I replaced the Apf largely and made a whole wheat version.
The Combo made in this fashion becomes a healthier substitute to the normally high fattening version. So next time you are scared on binging chana-bhatura try my method and you will never regret.
Normally after eating Chana-Bhatura for lunch I would have skipped my dinner too, as I find it very heavy to digest. But today with this version I was hungry by 4 PM to have some snacks. This version is surely easy to digest and light on the stomach.

Ingredients For NO OIL Chana
4 hand full of Chana/ Garbanzo soaked overnight
a tsp salt salt
a pinch of cooking soda
spices
3 black cardamom
a cinnamon stick
3-4 green cardamom
6-7dry amla/gooseberry pieces
Fresh Whole Spice Masala
1-1/2 tsp carom seeds/ajwain
3-4 tbsp coriander seeds
3 tsp cumin seeds
2 tsp rock salt
1 tsp white pepper pwd
2 tsp red chili pwd
1 tsp kashmiri chili pwd
1/2 tsp clove pwd
3 tsp anardana pwd
1-1/2 tsp amchoor pwd
1 tsp ginger pwd
& like I said – NO OIL Thumbs-up
Method
Soak Chana/garbanzo overnight.
In a pressure cooker take the soaked chana,  cooking soda, salt, green and black cardamom, cinnamon and dry amla. Cook it on a high flame till the first whistle then simmer and cook for 20 mins.
The chana should be cooked soft. When the pressure drops remove the whole spices and amla.
Roast the carom, coriander and cumin seeds. Grind it along with the other ingredients mentioned under whole spice masala.
Add this to the cooked chana and mix properly. Now using back side of the ladle crush some chana. Add a cup of water and cook this on low flame for another 15-20 mins or till the chana absorbs the masala.
Sprinkle some finely chopped onion on the chana and serve hot with the Bhatura.

Ingredients for Whole Wheat-Bread Bhatura
8-10 bread slices
3 cups APF
2 cups Wheat Flour
1 tsp salt
water
Method
Remove the edges of the bread and soak it in water and mash it into a smooth paste ( I used my food processor).
Add the salt and both the flours. Using water knead a soft dough, cover it with a lid and leave it to rise for half an hour in a warm place.

Heat oil in a pan (use medium high).
Take a small portion of the dough (as big as ping pong ball).
Grease the dough ball lightly and on a marble slab pat it into a 6inch circle, 3-4 mm thick (Like poori). If you find patting difficult, one can use a rolling pin.
Lift it gently and slide it into the frying pan, check that the oil is not extremely hot, else one can see the bhatura browning instantly.
Using a slotted spoon fry the bhatura and let it puff evenly.
Remove on a kitchen towel.

Serve hot with Chana.

Bonjour à tous,
La sécheresse sévit de nouveau, durable et tenace; plantes et animaux dépérissent dans les forêts et les jardins. Tout près de nous, les animaux des jardins souffrent et meurent de la soif...au point, par exemple, que les écureuils rongent parfois les tuyaux d'arrosages intégrés pour accéder à l'eau. Des gestes simples sont à portée de tous pour secourir la faune sauvage:
Déposer dans nos jardins ou sur nos terrasses des récipients peu profonds pleins d'eau où les petits animaux (oiseaux, abeilles, écureuils, hérissons, etc.) pourront s'abreuver.
Si vous disposez d'un petit bassin ou d'une mare, ne la videz pas au prétexte d'éviter les moustiques: introduisez dans ce point d'eau quelques poissons ou amphibiens consommateurs de larves de moustiques. Maintenez un niveau suffisant dans ces mares.
Veillez à ce que ces mares ou bassin disposent de hauts-fonds permettant aux animaux de ne pas se noyer et de ressortir de l'eau facilement.
Si vous avez une piscine, des animaux risquent de s'y noyer en y venant boire : une planche flottante et un dispositif de sortie peuvent les sauver.
Lors de vos promenades forestières, si vous remarquez d'anciennes auges à résines contenant de l'eau, n'hésitez pas à y ajouter un peu d'eau. Merci également de laisser (ou de déposer) une ou deux fortes branches dans ces auges, afin de permettre aux animaux d'accéder à l'eau sans se noyer.

... Et bien sûr, économisez autant que possible l'eau potable (issue des nappes profondes et des eaux de surface) et l'eau des puits de jardin (issue de la nappe superficielle).

Foodles from Horlicks..a product review

From now onwards product review will be a regular feature in my blog. People living in India might have seen the advertisement of Foodles from today.
I had tried this last week when Horlicks had passed on these samples to S. The name Horlicks brings in a lot of expectation as their health drinks are extremely popular and now after  tasting these Foodles, I can surely say that it’s going to a big success.
I tried the   curry and  ala masala flavors and both are good and the taste different and suitable for Indian palate. Priced at Rs. 15 for 80g pack which is an approachable price for Indian clientele, these are health packed, made with four grains- Ragi, Rice, Wheat and Corn.
Horlicks has surely targeted health conscious parents. It’s a different product made with multi grains, something which Indian market has not seen yet, so will surely attract people. It is a good source of proteins, fats and carbohydrates so is extremely good for growing children.

L’Association poursuivie en justice pour diffamation
Benoît Bartherotte poursuit Jean Mazodier et l’Association Protection et Aménagement pour diffamation et Michel Sammarcelli pour complicité pour les propos de ce dernier rapportés dans notre bulletin n° 73 de janvier 2010 suite à notre Assemblée Générale du 12 août 2009.
L’audience du Tribunal de Grande Instance de Bordeaux s’est tenue le 28 juin.
Le délibéré du Tribunal devrait avoir lieu à l’audience du Tribunal Correctionnel du 30 août prochain.

Le Cap-Ferret : Bartherotte-Sammarcelli et les « mots assassins »
Michel Sammarcelli avait accusé Benoît Bartherotte de ne pas payer d'impôts locaux. Son vieil ennemi le poursuivait en diffamation hier devant le tribunal.

La scène se passe au mois d'août 2009 dans la salle de la Forestière au Cap-Ferret. L'association de protection et d'aménagement de Lège-Cap Ferret tient son assemblée générale. Comme à l'accoutumée, le maire, Michel Sammarcelli y a été convié. L'élu est encore sous le choc de la diffusion du reportage réalisé par une équipe du magazine « Capital » pour M6. Il n'a pas été épargné. Plusieurs habitants lui ont vertement reproché de vendre la presqu'île aux plus offrants.
Amer, Michel Sammarcelli, s'épanche devant son auditoire et critique l'un de ses accusateurs. « Ce propriétaire qui loue ses cabanes entre 15 et 20 000 euros la semaine mais ne paie ni taxe d'habitation, ni impôt foncier. » Personne n'est nommément désigné mais tout le monde a reconnu Benoît Bartherotte, l'irréductible ennemi du maire. Quelques mois plus tard, lorsque le discours de l'élu est reproduit dans le bulletin de l'association, le sang de Benoît Bartherotte ne fait qu'un tour. Il tient enfin l'occasion de traîner le premier magistrat devant le tribunal.

Un impôt volontaire
Hier après midi, Jean Mazodier, le président de l'association, et Michel Sammarcelli répondaient respectivement de diffamation et de complicité. Benoît Bartherotte était venu avec un volumineux sac plastique gorgé de documents dont une attestation de la trésorerie d'Audenge signifiant qu'il était à jour de ses impôts. « Avec des phrases assassines, on peut démolir un homme, déplore son avocat Me Boerner. Non seulement, il acquitte ses impôts mais sans lui, des dizaines d'hectares auraient déjà disparu. Depuis vingt-cinq ans, il paie un impôt volontaire en construisant et en entretenant une digue de 400 mètres financée avec l'argent des locations. »
La discorde a creusé son sillon. Benoît Bartherotte et Jean Mazodier n'ont plus envie d'évoquer l'époque où ils appartenaient tous les deux à la même association. « Je me demande ce que je fais ici », lâche Jean Mazodier. Ce descendant d'une vieille famille ferretcapienne estime n'avoir fait que répercuter le discours d'un maire élu et « bien élu » par la population.
« Ce bulletin était réservé aux membres d'une association unis par une même communauté d'intérêts, à savoir la protection et la sauvegarde de la presqu'ile », rappelle Me Lionel Marconi, son défenseur, en s'abritant derrière une jurisprudence de la cour de cassation. « Aucune diffamation publique ne peut tenir lorsqu'un écrit à usage interne n'a fait l'objet d'aucune publicité. »
Bataille juridique
Davantage que sur le sens des mots, c'est aussi sur le terrain du droit que se place Me Valérie Sempé, le conseil de Michel Sammercelli. « Les propos litigieux ont été reproduits plusieurs mois après son intervention mais sans son aval. Or dans de tels cas de figure, la cour de cassation précise bien qu'il faut l'accord express de l'intéressé. Qui plus est, Benoît Bartherotte n'était pas désigné. Il a parlé d'un propriétaire qui loue des maisons. Il n'est pas le seul au Cap Ferret. »
Michel Sammercelli qui ne passe rien à Benoît Bartherotte a pris garde de ne pas monter sur la barricade sans biscuit. Il détient un document émanant de l'administration fiscale en date d'octobre 2008 selon lequel il est exonéré de taxe d'habitation en raison de son âge et de revenus trop faibles. « Michel Sammercelli n'a fait que dire ce qui était », poursuit Me Sempé. Pour Benoît Bartherotte en tant que personne physique. Mais quid du ménage Bartherotte. Le plus médiatique des Ferretcapiens, ne snobe pas le fisc. Mais ce n'est pas lui qui signe les chèques mais la société civile immobilière, propriétaire des constructions dont sa femme est la gérante.
Le tribunal correctionnel présidé par Caroline Baret s'est donné jusqu'au 30 août pour démêler cet écheveau juridique. Mais cela ne devrait pas empêcher d'ici là les duellistes du Cap-Ferret de tricoter un nouveau contentieux. Il a pris naissance dès hier à l'audience par avocats interposés. Michel Sammercelli a refusé de retirer de ses conclusions l'affirmation selon laquelle Benoît Bartherotte avait été privé pendant dix ans de ses droits civiques à la suite de la faillite de l'une de ses sociétés.
