One of the most important advice that I can give you on the kitchen perhaps is the fact that everything should be available in advance. There's nothing like the disadvantage of being in the middle of setting up a recipe and then realize that you are short on one of the ingredients. Make sure you have everything down in writing and then to go on the list of ingredients before you begin actually put together. It is not only to save you time, it will save you a considerable amount of frustration.

It is also a good idea for you to experiment when cooking. This is particularly the case with regard to the different types of food that are available. Some people who like to Cook will enjoy a food of the month club because it will allow them to try to make different foods with a variety of ingredients. The type of subscription of food that you will make a difference in the type of food that you prepare so make sure that you look at the available options before choosing a club to join.

Delicious Slovak and Serbian Traditional Easter Foods (Chris Rawstern)

Both my grandmothers have been gone from my life for over 40 years, but the impact their foods made on my life was strong. My grandparents from both the Serbian and Slovak sides of the family came from Europe in the early 1900s, bringing their knowledge of the foods and traditions along with them. Easter, along with Christmas, are the two holidays I associate with the most traditional foods.

Both sides of the family made traditional baskets of foods to take to their respective churches to be blessed. Though Slovakia and Serbia are not close to each other, the traditions of the area are very widespread. As the last Easter I may have spent with one of my grandparents was about 44 years ago, my personal memories are sketchy in some areas, and vivid in others. Lately, it has felt important to reach out to my siblings and learn what memories they might still have that are gone from my recollections.

The items traditionally placed in the basket of foods to be blessed are ham, sausage, egg cheese, bread, beets with horseradish, salt, butter, Easter eggs and a candle. There may be other things that were added. I recall the baskets being taken to church, but not too much more.

Traditional Foods

Some of the traditional foods that are less common here in the US are the beets with horseradish and the egg cheese. It seems lately that beets with horseradish recipes have been popping up all over. Not like the traditional one my grandma made, of course, but that combination suddenly has become apparent.

Beets with Horseradish

The recipe that my Serbian grandmother passed down was from grated cooked or canned beets, mixed with bottled horseradish to taste. The recipe amounts are fluid, depending on the size of family and how much horseradish one can tolerate. For two jars of beets, well drained and shredded, about 1 tablespoon of horseradish may be added. This amount may be increased or decreased as needed. A little sugar is added, from 1 to 3 teaspoons. All ingredients are mixed well, and then can be spooned into jars until needed.

This beet dish is used as a condiment, to go with the ham and other Easter foods. It can be used as a side dish on the plate, or it can be used on a sandwich of the traditional Easter Paska Bread with ham or sausage. The Serbian name of the beets and horseradish dish is not one I can recall. I have read that depending on the area it is from, this may be called Ren, Hren, Chrin and many other variations.


Egg Cheese

This particular dish is one that I firmly recall only being called by its Serbian name, Sirets. The pronunciation of this word is SEE rets, with the letter R trilled. It is one of the traditional foods I have never cared for, but my Dad just loved. Since my Mom never made it, I asked Grandma for her recipe so I could carry on the tradition.

She told me to take one quart of whole milk and a dozen eggs in a pan and mix them together really well, adding in a little bit of salt and sugar. Over time I have found that about 2 teaspoons each of the salt and sugar work well. The mixture is cooked slowly on the stove, stirring constantly, until the eggs begin to cook and separate. Once the mixture has completely separated, it is poured into a cheesecloth lined colander to drain. Once drained, the ends of the cheesecloth are brought together and tied, and the ball is hung to continue draining. Grandma hung the cheesecloth ball from her kitchen faucet. Once the egg cheese ball has cooled it is placed in the refrigerator to continue to firm and chill. When ready to eat, it is unwrapped from the cheesecloth and sliced.

Paska Bread
This rich butter and egg bread was made mainly for Christmas or Easter. My Slovak mom also made it for Thanksgiving. The bread is delightful, and I have made this recipe as our daily bread since the 1970s. It may have started as a traditional bread used only for these special feasts, but it is far too delicious to limit its use. I have now created a version that is easy to make in my heavy duty stand mixer. For Easter, the bread is braided, either in a ring shape, or a round loaf with a small braid on top or in a braided loaf.

Keeping traditions alive for your children is a worthwhile endeavor, giving them a sense of place in the world. It is not meant to divide or separate cultures, but to keep the foods in their purest state so they maintain their ability to stand out from the crowd in these days of fusion cooking.

Making Your Own Bagels is a Delicious, Budget Friendly Treat for the Family (Chris Rawstern)

Making bagels is a little bit of a production. They need to be boiled and then baked, making them more time consuming, but the flavors more than make up for it. The bagels I made are Cinnamon Raisin flavored, but the cinnamon and raisins could be omitted, substituting other things as desired. Think of adding things like walnuts or pecans or other nuts of choice. How about date pieces instead of raisins? Using dried blueberries would mimic another store type of bagel, but why stop there? How about using dried cherries, dried cranberries or even chopped dried apricots?

There are also savory additions to take into consideration. I love grains and seeds in my bagels. Cook some wheat or rye berries until soft and add them to the bagel dough. The same can be done with barley. Add in sesame seeds and sunflower seeds to make the bagels more nutritious and provide texture. Leave the bagels plain and instead use toppings to provide flavors. Brush on an egg wash and sprinkle on some sesame seeds or poppy seeds. Slowly saut? some onions until well caramelized and brush them onto the top of the bagels before baking. These ideas are nothing new, so think up ideas of your own.

Cinnamon Raisin Bagels

DOUGH
4 1/2 cups bread flour
5 teaspoons instant rise yeast, about 2 packets
2 1/4 cups lukewarm water, no more than 110 degrees
3 tablespoons sugar
2 teaspoons salt
3 teaspoons cinnamon, reserve 1 teaspoon aside
1/3 cup raisins

WATER BATH
10 cups water
1 tablespoon sugar
1 tablespoon baking soda

EGG WASH
1 egg white
1 teaspoon agave syrup or corn syrup

MAKE DOUGH. In a mixer bowl combine 1 1/2 cup of flour, yeast, 3 tablespoons sugar, 2 teaspoons salt and 2 teaspoons of the cinnamon. Heat the water in the microwave in 30 second intervals until this mixture is just lukewarm, no more than 110 degrees. Add this to the flour in the mixer bowl and turn on low to combine, then increase speed and beat for 2 - 3 minutes. If using a heavy duty mixer capable of kneading bread dough, switch to the dough hook. If not using a heavy duty mixer, continue by hand. Begin adding the 3 remaining cups of flour. Knead for 8 to 10 minutes until smooth and elastic. Add in the last teaspoon of cinnamon for the last 15 to 30 seconds of kneading, leaving streaks of cinnamon through the bagels. Set aside to rest in a warm place for 20 minutes.


WATER BATH. In a very large pot, combine the water, sugar and the baking soda. Stir well to combine the ingredients and melt the soda. Place on stove and bring to a gentle boil, then reduce to a simmer. Preheat oven to 375 degrees.

GLAZE. Mix together the glaze ingredients, have a pastry brush handy and set aside. Prepare 2 large baking sheets by lining them with parchment. Spray the parchment with cooking spray. Set aside. Have some paper toweling handy for blotting the bagels after their water bath.

Turn out the dough onto a working surface. Lightly sprinkle flour over the surface. Divide the dough into 12 or 14 portions. Take a portion of the dough and form a tight ball by continually bringing sides to top and pinching together. Poke a finger down into the center, then using gentle pressure, widen the hole until you can easily fit all 8 fingers inside. The dough will spring back down to a very small hole. Set aside and continue with all the bagels. Allow them to rest for 20 minutes.

If the pot with the simmering liquid is large enough, place 2 or 3 of the bagels at a time into the pot. Time them for 1 minute. Flip and time for one minute more. Remove to the paper toweling with a large slotted spoon or spatula and blot well. Gently place onto the prepared baking sheets. Repeat until all the bagels are on the baking sheets. Brush the bagels with the prepared glaze. Have the oven racks set at the lower and middle positions. Place the two pans in the oven and bake until golden, about 20 minutes.

If using different flavorings than cinnamon and raisins, eliminate these two ingredients and substitute about a half cup of some other nut, seed or grain for flavor and texture. If making plain or savory bagels, eliminate the syrup in the final glaze and substitute egg yolk for the glaze. These are quick to make when using instant rise yeast and so worthwhile. Do give them a try.

Three cakes with unusual names that are easy to make and which will delight the family (Chris Rawstern)

Three different cakes came into my life through various avenues. The Wacky cake was presented to our family by my aunt, and it has been a success ever after. At the time, the wonder of the cake wacky is that he worked. He did a really good chocolate cake, using minimal ingredients. It uses no eggs or dairy products. The fun part was taken three wells in the dry ingredients. Two of my sisters and I were able to add liquid ingredients and MOM would combine to cook.

The other two are the Mayonnaise, also chocolate cake, and tomato soup cake, which is a spice cake. That the Mayonnaise cake works are without surprise. Mayonnaise is made of oil and eggs, two ingredients often used in the manufacture of a cake. Tomato soup cake is a spice cake. Whereas tomatoes are really a fruit, as well as the addition of a bit of spices, nuts and raisins, this cake is so delicious.

Here are three recipes. I hope that you will make memories with your family as my mother for my sisters and me. When children become involved in the realization of something, they become curious to see what it tastes like. Vinegar or mayonnaise or tomato soup as an ingredient in a dessert will be neglected once the results are tasted. Their young lives never change after a wonderful way.

Wacky cake

1 1/2 cup all purpose flour
1 cup granulated sugar
2 tablespoons unsweetened cocoa powder
1 tsp baking soda
1/2 teaspoon of salt
6 tablespoons vegetable oil
1 tablespoon vinegar
1 teaspoon of vanilla extract
1 cup water

Preheat the oven to 350 degrees. Grease 8 x 8-inch square pan. Sift together the first 5 ingredients directly into the greased pan. Make three wells in the dry ingredients. Make a much larger, medium and small. Have your children to pour oil into the large well, vinegar in the medium well and the vanilla in the small property. Pour the cup of water in all and stir until just mixed. Bake for about 30 minutes. Let cool completely, then frost with your favorite frosting.


Tomato soup Cake or cake mystery

2 cups cake flour
2 tsp baking powder
1/4 TSP baking soda
1/2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/4 tsp. cloves
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 tomato, 10.5 oz. soup can
1 cup chopped walnuts
1 cup of raisins

Preheat the oven to 375 degrees. Grease two round pans cakes and 8 inches from the bottom of the scroll line. Sift first 6 ingredients together and set aside. Cream shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each. Add the dry ingredients alternately with the soup, beginning and ending with the flour mixture and the soft. Beat well after each addition. Stir in nuts and raisins. Pour into moulds prepared and cook for about 30 minutes. Cool the cakes for 10 minutes before removing from pans. Cool completely and frost with a frosting of your choice.

Mayonnaise cake

2 cups all-purpose flour
5 tablespoons unsweetened cocoa powder
1 cup sugar
1 tsp baking soda
Pinch of salt
1 cup water
1 cup of mayonnaise
1 1/2 tsp vanilla extract

Preheat the oven to 350 degrees. Grease and flour a 8 or 9 inch square cake pan. In a bowl, whisk together the first 5 ingredients. Add next three ingredients and beat until smooth. Pour into the prepared pan and bake in the oven for 25 to 30 minutes or until cake tests done. Cool completely before spreading with your favorite icing.

Making memories today in one of those deliciously different cakes.

Gobi Matar/ Cauliflower And Peas Curry


          Another curry that I make often these days, is this Gobi Matar/ Cauliflower And Peas Curry, the reasons being, this curry goes well with both rotis and rice, super easy to prepare and tastes very good. To add to all the above and the most important, my daughter, who's not a big fan of this vegetable, except in Pakoras/ Fritters and Manchurians ( both deep fried)  likes cauliflower cooked this way, which is much more healthier. It's not a gravy, it would fall between semi-dry to dry curry. If you have leftovers, you can very well use it as a filling for a very tasty sandwich the next day..

Need To Have

  • Cauliflower - 1 medium head
  • Fresh Or Frozen Green Peas - 1 cup
  • Tomatoes - 2, pureed
  • Grated Ginger - 1 tablespoon
  • Grated Garlic - 4 cloves
  • Turmeric Powder - 1/4 teaspoon
  • Red Chilly Powder - 1/2 teaspoon
  • Coriander Powder - 2 teaspoons
  • Garam Masala - 1/2 teaspoon
  • Cumin Seeds - 1 teaspoon
  • Salt - to taste

Method


          Cut the cauliflower into medium size florets, wash, blanch and keep. Heat some oil, add the cumin seeds. When it starts sizzling, add the grated ginger and garlic, and saute for about 2 minutes, till the raw smell goes away. then add the cauliflower pieces ( came to about 5 cups) and saute for 2 more minutes.


          Then add the turmeric, chilly and coriander powder and the salt, mix it well. Add the peas and tomato puree and about 1/4 cup of water, cover and cook till the vegetable is done. Open the lid, add the garam masala and keep mixing till most of the moisture dries up. Serve it warm with rotis.


Note
The cauliflowers here in India are pretty tough, so after blanching, they are just half cooked, the ones available in the US, would be cooked by then, so just wash in hot water and cook accordingly.
You can cook the peas separately and add at the end for bright green color.

Vegan Chocolate Chunk Cookies


          Chocolate Chip Cookies, though I have baked it a couple of times, never blogged it, so I thought it's high time that I added this to my bakes. I had initially thought of doing it as half oil and half butter version, but then I had bought some tofu the previous day and I wanted to use it, so went ahead and made a vegan version. To tell you the truth, I was not sure of the result, made a very small batch of just 7 cookies, ready to trash it, if something went wrong. But at the end, they turned out to be really very good, soft and guey, otherwise I wouldn't be blogging it, right. Since I ran out of chocolate chips, I've replaced it with chocolate chunks, hence the name Chocolate Chunk Cookies..

Need To Have

  • All Purpose Flour - 1/2 cup
  • Powdered Sugar - 1/6 cup
  • Chopped Chocolate Chunks - 1/6 cup
  • Oil - 21/2 tablespoon
  • Baking Powder - 1/8 teaspoon
  • Baking Soda - 1/8 teaspoon
  • Vanilla Extract - 1/4 teaspoon
  • Crumbled Tofu - 1 tablespoon
  • Water - 1/2  teaspoon

Method


          Sift together the flour, baking soda and baking powder. Take the oil and sugar and beat well, add the vanilla extract, salt, followed by the sifted flour and tofu.


          Bring it all together to form a dough, at this point, if needed, add the 1/2 teaspoon of water. Finally mix in the chocolate chunks. Divide into 6 or 7 portions, shape it into balls and flatten it slightly. Bake them at 180C for 15 to 20 mins. Let it cool and remove.


Note
The next time I am baking this, I am going to reduce the oil, since once I added the chocolate chunks, the dough became pretty oily, I think it's because of the cocoa butter in the chocolate, if you are using chocolate chips, I think this amount of oil should be fine.
The baking time should vary anytime between 15 to 20 mins, remove the cookies, when it's still soft, it hardens as it cools.
The cookies stay good for 2 to 3 days, after that they tend to harden a bit, also after 3 days, better to refrigerate since it has tofu.

Vazhaithandu Poriyal/ Banana Stem Curry


         The pith or the inside part of the banana stem has many medicinal benefits. Whenever I find a good piece of it, I buy it, at least once in 2 or 3 weeks, I know and do only a couple of dishes with it, one is this Vazhaithandu Poriyal and the other is the Thayir Pachadi ( with yogurt/ curd). I have to learn some more dishes with this vegetable or stem. This is my mother's recipe, the tuvar dal and coconut added gives a nice taste to this curry, try it out, when you get a chance to get this vegetable..

Need To Have

  • Vazhaithandu/ Banana Stem - cleaned and chopped, 2 cups
  • Tuvar Dal/ Split Pigeon Peas - 2 tablespoons
  • Green Chillies - 2, sliced
  • Turmeric Powder - 1/4 teaspoon
  • Mustard Seeds - 1/2 teaspoon
  • Urad Dal/ Black Gram - 1 teaspoon
  • Asafoetida - 1/4 teaspoon
  • Grated Coconut - 2 tablespoons
  • Curry Leaves - 10
  • Salt - to taste

Method


          The banana stem looks like a white log, with layers of rind surrounding the smooth interior, we can just make slits and remove the rinds easily, till you get a smooth log.


          Now slice it, after each slice, wipe and remove with your finger, the fiber that comes after each slice. Keep the slices immersed in water.


          Once you have sliced the entire log, chop them and keep in water. Soak the tuvar dal in water for an hour, drain and keep.


          Heat some oil, add the urad dal and mustard seed, when it starts spluttering, add the asafoetida, green chillies and curry leaves, mix and add the chopped vazhaithandu and soaked lentils.


          Mix, add the turmeric powder, salt and 1/4 cup water, cover and cook on medium heat, till both the vegetable and the dal gets cooked. Then add the grated coconut, mix and serve as a side dish with rice and dal or sambar.


Note
You can prepare the vegetable the previous day, keep it soaked in thin buttermilk, in the refrigerator, then cook it the next day.
You can cook the tuvar dal separately and add, but it should be cooked but not mushy.
You can add a chopped onion along with the green chillies, saute for a minute and then add the vegetable.

          Many of us are familiar with the famous Ragda Patties, this is a slight healthy twist to this delicious dish. Ragda is the chickpeas or peas gravy that is served with the potato patties. Here I have reduced the potatoes and replaced it with the healthy quinoa and sauteed cabbage, they tasted really awesome. The chickpeas gravy that I have used here is slightly different, in that I have added some tamarind and jaggery, to give it a sweet and sour taste. The Quinoa Patties, topped with the Chickpeas Gravy, with a sprinkle of sliced onions and green chutney, made up for a wholesome and healthy meal, try this next time you cook quinoa..

Need To Have
For The Patties

  • Quinoa - 1/2 cup
  • Potatoes - 2 medium, boiled and mashed, came to 1 cup
  • Shredded Cabbage - 2 cups
  • Grated Ginger - 2 teaspoons
  • Turmeric Powder - 1/4 teaspoon
  • Red Chilly Powder - 1/2 teaspoon
  • Coriander Powder - 2 teaspoons
  • Asafoetida - 1/4 teaspoon
  • Garam Masala - 1/4 teaspoon
  • Salt - to taste

For The Chickpeas Gravy/ Chole

  • Chana/ Chickpeas - 1 cup
  • Tamarind - 1 large grape size
  • Turmeric Powder - 1/4 teaspoon
  • Red Chilly Powder - 1/2 teaspoon
  • Coriander Powder - 2 teaspoons
  • Jaggery - 1 teaspoon
  • Cumin Seeds - 1 teaspoon
  • Cloves - 2

To Grind

  • Onion - 1 small
  • Tomato - 1 medium
  • Cooked Chickpeas - 2 tablespoons
  • Garlic - 3 cloves
  • Ginger - 1" piece

To Assemble

  • Quinoa Patties
  • Chickpeas Gravy
  • Sliced Onions
  • Green Chutney ( store bought or home made)

Method
Quinoa Patties


          Cook 1/2 cup quinoa as per the instructions on the bag or refer here, it should be cooked, but not mushy, cool it. Heat some oil, add the cabbage and salt, and saute it till it's cooked but still retains a little bit of the crunchiness.


          Now in a bowl, take the cooked quinoa, mashed potatoes, sauteed cabbage, grated ginger, turmeric, red chilly and coriander powders, asafoetida, garam masala and salt. Mix it well with your hand, and shape into small patties, I got 16 patties.


          Heat some oil, and shallow fry the patties till golden brown on both sides, remove and drain the excess oil.

Chole/ Chickpeas Gravy


          Pressure cook the chickpeas with salt, till soft, it takes about 8 to 10 minutes in the pressure cooker. Grind together all the ingredients given under ' to grind '. Soak the tamarind in 1 cup hot water, squeeze and take the extract, strain and keep.


          Heat some oil, add the cloves and cumin seeds, when it starts sizzling, add the ground paste, turmeric, chilly aand coriander powders and salt, saute it on medium heat for 5 to 7 minutes, till the raw smell goes away, if it sticks to the pan, sprinkle some water and keep sauteing.


          Now add the tamarind extract, mix well, then add the cooked chickpeas and the jaggery, if needed another half cup of water and simmer for another 7 to 10 minutes, now your chickpeas gravy is ready.


To Assemble
          Place 2 or 3 patties, pour a little chickpeas gravy on the side and top, top it with the sliced onions and the green chutney. Do this just before serving.

The patties can be made ahead of time and can be warmed in the oven or on stove top, just before serving, even the chickpeas gravy can be made the previous day and refrigerated.
If the quinoa is overcooked, then the whole dish will become very mushy, then you'll need other dry ingredients like bread crumbs to bring it together.
Generally they also serve a sweet tamarind or date chutney along with the green chutney, but I don't find the need here, since I have added the tamarind and jaggery to the chickpeas gravy itself.
You can serve this as a snack or appetizer or also as a complete meal by itself.

Methi Thepla/ Flat Breads With Fenugreek Leaves


          My last post was Mango Chunda/ Chutney, and I had mentioned there, that, I had made Methi Theplas to go with it or vice versa. Theplas are basically flatbreads made with a dough which is made of wheat flour and yogurt/curd along with some spices. Though I had tasted it a couple of times, I really fell in love with it, when I tasted them at my friend's place, her mother had made them and brought with her when she had travelled from India to the US. They tasted simply too good, and I didn't hesitate a moment to ask her the recipe. I made it last week for lunch along with the Chunda and we simply loved it..
Need To Have
  • Whole Wheat Flour - 1 cup
  • Chopped Methi/ Fenugreek Leaves - 1/2 cup
  • White Sesame Seeds - 1 teaspoon
  • Yogurt/ Curd - 1/4 cup + 2 or 3 teaspoons
  • Turmeric Powder - 1/4 teaspoon
  • Red Chilly Powder - 1/4 teaspoon
  • Coriander Powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Sugar - 1/4 teaspoon
  • Asafoetida - 1/4 teaspoon
Method


          Take the flour, fenugreek leaves and sesame seeds in a bowl and mix it. In another bowl, take the 1/4 cup yogurt ( warmed for 20 secs in the microwave), add the turmeric, chilly and coriander powders, salt, sugar and asafoetida, mix it nicely. 


          Now add this to the flour and bring it together to form the dough, at this point you might need the extra 2 or 3 teaspoons of extra yogurt to get a nice smooth and soft dough. Apply some oil and leave it covered for at least 30 minutes. Divide them into 8 portions. Dusting some flour, roll them into thin discs. 


          Place it on a hot skillet, when you notice it bubbling up slightly, flip it, brush some oil and flip it immediately. Brush some oil on the second side, and once the first side gets light brown spots, flip it one last time and cook the other side till it gets the brown spots. Stack the theplas, one over the other, this way they retain their softness. Serve it warm with some Chunda or any side dish of your choice.


Note
Fresh or frozen fenugreek leaves are available in Indian grocery stores, both work well for making these theplas, if you don't find them, replace them with spinach and some kasuri methi/ dried fenugreek leaves.
My red chilly powder is really spicy, you can add a little more if needed.
While making the theplas, flip it only thrice like I have mentioned, that way you'll get softer theplas.

Okra-Fenugreek Leaves Dry Curry

Bhindi and Methi, yes! You heard right. I know it’s an unusual combination but believe me it’s absolutely worth it. Okra is abundantly available these days and Methi/fenugreek is slowly eloping from the market, so when I got hold of a bunch of fresh looking Methi, I could not resist myself. We all love methi and I love Okra too and I look forward trying new recipes with both the vegetables.

Recently, a reader asked me if I could post a recipe with Okra, though I sent her links of the recipes I have posted earlier yet it set me thinking that I should attempt something new and interesting.. I realized it was quite sometime that I posted anything with the two vegetables..The last recipe I posted using Bhidi was Smoked Cottage Cheese Okra which was about two years back and using Methi was stuffed Potato-Fenugreek Paratha which was about 3yrs back..hmmm, so many years passed by and I never realized..never mind.. this post will take care of that.
I must tell you that this particular curry is simple to make with no extravagant spices. It’s perfect for everyday cooking which can make you feel longing for more bites..and isn’t that what we want for our regular meals, simple ‘ghar ka khana’/ simple home cooked food with a twist and turn here and there, which is good for health and light on the stomach. This curry falls absolutely in the comfort food category which you can cook regularly and will not harm you, as a matter of fact both Fenugreek and Okra are extremely good for digestion..

Okra-Fenugreek Leaves Curry

Preparation Time:20mins

Cooking Time:15mins

Serves:2-3

Difficulty Level: Moderately Easy

 

Ingredients

400-450gms Okra (washed and patted dry)
1onion, finely chopped
1cup Fenugreek leaves, finely chopped
1/2 tomato, finely chopped
3-4tbsp oil
1/2tsp cumin seeds
1/2tsp mustard seeds
a pinch of asafetida
1/2tsp turmeric
1tsp red chili pwd
1tbsp coriander pwd
1tsp cumin pwd
1/2-3/4tsp amchoor/ dry mango pwd
salt to taste

Method

Heat oil and splutter the mustard seeds, reduce the flame and splutter the cumin seeds. Add asafetida.
Tip in the onions and sauté. Once the onions are cooked, tip in the fenugreek leaves, salt to taste and cook. The leaves wilt and start cooking.
Add half the turmeric powder and Okra and sauté. Cook the Okra uncovered initially on high flame and then on low flame. The trick is to cook the Okra perfectly without letting it’s color change.
When the Okra is half cooked, add the tomatoes and cook.
Cook the Okra till it’s almost done, now add all the dry spices and remaining turmeric powder. Cook for 2more minutes and then turn off the flame.
Serve with hot chapati or phulka.
