Methi Pilaf/ Rice With Fresh Fenugreek Leaves


          Back in India, after more than a month's stay in the US, hardly had time to check my blog since last Friday, and again this weekend is going to be a busy one with house hunting in Bangalore. In the meantime, whenever I get a chance I am trying to do a post and visit other blogs. Today's post, Methi Pilaf, again something that I had cooked 2 months back, I haven't cooked anything for more than a month now. This is once again a very simple and flavorful dish and goes very well with almost any side dish or even a simple raitha or yogurt..


Need To Have
  • Basmati Rice - 1 cup
  • Chopped Methi/ Fresh Fenugreek Leaves - 1 cup, packed
  • Fresh Or Frozen Green Peas - 1 cup
  • Tomatoes - 2 medium, chopped
  • Garlic - 5 cloves, chopped
  • Broken Cashew Pieces - 1 tablespoon
  • Red Chilly Flakes - 1 teaspoon
  • Coriander Powder - 2 teaspoons
  • Turmeric Powder - 1/4 teaspoon
  • Cinnamon - 1" piece
  • Cloves - 2
  • Cumin Seeds - 1 teaspoon
  • Salt - to taste

Method


          Soak the basmati rice for 1/2 an hour. Heat some oil, add the cinnamon, cloves and cumin seeds, when it starts sizzling, add the chopped garlic, saute for a minute, then add the cashews and saute till both the cashews and garlic turn golden. 


          Now add the tomatoes and saute for a minute, then add the green peas, chopped methi, chilly flakes, coriander and turmeric powders, mix everything and cook till the tomatoes have turned mushy. Drain the water from the basmati rice and add it and mix it for about a minute. 


          Add 21/2 cups of water and salt and cover with a lid. Once the water starts boiling, reduce the heat and cook till done.


Note
Can use even frozen fenugreek leaves that you get in Indian stores.
When you cook the rice, once almost all the water has gone, switch off the stove and leave it covered and undisturbed for about 20 to 30 minutes.
Can replace green peas with some cooked chickpeas.

Kitchen Tips & New Winner of April’s ‘Only’ Event

 

Hi all!!

All the people who read this blog are interested in cooking which means that they love to be in the kitchen. Every now and then while working in the kitchen we need quick fixes, solutions, remedies and tricks to keep us going. For instance we have guests at home and the curry that you have cooked has excessive salt, so how do you mend the curry or if the Idli dough or the curd has become too sour, how to reduce or prevent the sourness, we need tips and tricks for all of this so that we avoid wastage of food.

I do not claim to be an expert in cooking but from my experiences in the kitchen I do have learnt a few things and also a lot of theoretical knowledge was passed on to me from my Grand Mom’s, aunts, my Mom and also  a few tips that I had picked  from here and there too, which I’ve applied practically in my kitchen and honed my skills.

About two month’s back I decided to share the kitchen tips I knew with my fans/readers on the my Face book fan page and then it became a regular thing there and in this process I started reading and gathering many more tips which I could share on a regular basis.

Since my face book fans are enjoying the read and getting benefitted, I thought of compiling all the kitchen tips that I’ve posted till now and post them in a single page for many more get benefitted. This does not mean that I will not post more tips on my FB fan page, that will still go on. In fact  one can find a direct page to Kitchen tips under the header of my blog which I will keep updating from time to time and also will love to have your inputs and tips there but for a daily read, hop on to my FB Fan page and subscribe or like it and  I will also be sharing it on my Google +page from now on..

Kitchen Tips

  1. While cooking curries instead of using only butter or only oil, if a mix of butter and oil is used, it gives a good flavor and taste plus the fear of burning the butter is reduced too.
  2. Breadcrumbs come very handy. These not only provide crunch by coating cutlets and tikkis but can also be used to thicken sauce.
  3. This was a tip passed on to me by my granny. While we 'bhuno' the masala and wait for the oil to release in the corners, if a pinch of sugar is added, the oil releases faster.
  4. While cooking the onions, to speed up cooking add a pinch of salt.
  5. While cooking Okra/ Bhindi to reduce the slimy strings squeeze some lemon juice or put a few spoons of buttermilk.
  6. Whenever you are using mold always grease it so that nothing sticks on it and things come off easily.
  7. While cooking lentils add two three drops of oil, this fastens cooking.
  8. I use all the parts of the coriander. The maximum flavor is in the roots, then the stem and last is the leaves. While cleaning separate all the parts. Wash the roots thoroughly, these can be added to boiling lentils and curries and later removed and discarded. Stems can make to grinding as well as in fillings. Leaves can be ground into chutneys as well as used for garnishing.
  9. While making pickle, roast the salt and cool, before mixing.
  10. If you keep a piece of blotting paper/kitchen towel at the bottom of the storage container, it will keep biscuits fresh for a longer time.

    a. Take a bowl of water and place the egg, if it sinks completely, it's fresh as it can be.
    b. If it starts to stand up, it's still good.
    c. If it floats on water, it's spoilt, just discard it.

  12. To prevent the idli/dosa batter from souring, place a betel leaf over it.

  13. To avoid spilling over of milk when boiling it: If you see yourself standing in front of the stove guarding it till the milk boils, here’s what you need to do. Before you pour milk into the pot for boiling, rub butter along the top edge and the inside lip of the pot. Due to this, the milk won’t overflow when it foams up.

  14. To prevent potatoes from budding, keep an apple along with them in the storage packet.

  15. To keep lemons fresh without a dry skin, for a longer time in the fridge, apply them with coconut oil and keep them in an open container.

  16. At times it happens that we land up burning the rice while cooking it and the burnt smell makes it difficult to consume the rice. In that case spread 1-2 bread slices over the rice and leave for 10-15mins. The bread slices absorb the smell. Before serving remove the burnt portion.

  17. To keep green chilies fresh for long , remove the stem before storing them.

  18. To ripen fruits, wrap them in newspaper and put in a warm place for 2-3 days. The ethylene gas they emit will make them ripe.

  19. To set ice cubes faster, fill in the ice tray with warm-hot water. Hot water freezes faster as compared to water at room temperature.

  20. To reduce excessive salt in curries add grated/cubed potatoes else add balls of wheat dough, this absorbs the excess salt. Later one can remove the wheat dough balls. Also if the salt added is slightly high one can add sour things like tamarind, curds or lemon to balance the salt.

  21. While making spinach/palak recipes always add lesser salt as the spinach has natural salts in it.

          Till now, whenever I got mushrooms and baby corns, I had either prepared curries separately with each of them, or used them in fried rice or noodles, but never had I tried a kuzhambu with it. I tasted this at a restaurant, prepared in the Chettinad style, along with garlic, black pepper and coconut. I loved this curry and wanted to try it at home, the next time I had mushrooms and baby corn. This kuzhambu/ curry goes very well with rice, rotis, idlis and dosas, very easy to prepare and very flavorful, if you like garlic and pepper flavors, then you'll love this..

Need To Have

  • Baby Bella Mushrooms - 16 oz
  • Baby Corns - 8, diced into1" pieces
  • Onion - 1 medium, chopped
  • Garlic - 5 cloves, grated
  • Grated Ginger - 1 teaspoon
  • Tomatoes - 2 medium, pureed
  • Turmeric Powder - 1/4 teaspoon
  • Red Chilly Powder - 1/2 teaspoon
  • Coriander Powder - 2 teaspoons
  • Black Pepper Powder - 1 teaspoon
  • Fennel Seeds - 1 teaspoon, crushed
  • Curry Leaves - 10
  • Salt - to taste

To Grind

  • Grated Coconut - 1 tablespoon, packed
  • Fenugreek Seeds - 1/4 teaspoon

Method


          Heat some oil, add the crushed fennel seeds, when it starts sizzling, add the onions, grated ginger and garlic and saute for 2 to 3 minutes, till the raw smell of garlic goes away.


          Then add the tomato puree, red chilly, turmeric and coriander powders, 1/2 teaspoon of the pepper powder and salt and saute fro another 2 minutes. Now add the baby corn and mushrooms, mix for 2 more minutes, add 1/4 cup water, cover and cook for 5 minutes.


          In the meantime, grind the coconut and fenugreek seeds into a smooth paste. Add this paste to the cooked baby corn and mushroom, along with the remaining 1/2 teaspoon of pepper powder. Mix, simmer it on reduced heat for 5 minutes. Garnish with the curry leaves and serve warm with rice or rotis.


Note
If the mushrooms are small, keep it whole, otherwise dice into big pieces.
If it's difficult to grind the fenugreek seeds, you can add fenugreek powder to the coconut and grind.
Can reduce or increase the pepper powder depending on your spice level.

  • Frozen Or Fresh Green Peas - 1 cup

  • Red Chilly Powder - 1/4 teaspoon

  • Salt - to taste

Roasted Cumin Powder - roast cumin seeds and then powder it 

Method


          Heat some oil, add the onions and saute for 2 minutes. When it starts turning pink, add the salt, chilly powder and the sugar and keep sauteing it, till it starts turning brown and looks caramelized.


          Meanwhile, cook the green peas in the microwave or stove top, drain any excess water and keep. Once the onions have turned light brown, add the cooked peas and roasted cumin powder, mix well and keep cooking for another 2 or 3 minutes, remove and serve.


Note
You can leave out the chilly powder entirely, still the dish will taste good with a sweetish taste of caramelized onions.

I wanted to post an elaborate and a more creative dish here but pardon me friends, I’m just not able to bear the heat  and I simply dread long hours in the kitchen. I’m more into one pot or quick meals and my one BIG savior these days is Pasta which can be cooked in few minutes and you have ample choice to work on the flavors and play around with the veggies. The only thing I ensure is that I use Durum Wheat or Wheat Pasta, so that’s it’s good for my health too.
The pasta I’m posting today has no big recipe and has simple basic flavors and can be cooked on any lazy day without thinking too much..It’s a complete stress free recipe and that’s how I cook these days, which is no tension cooking Smile. Farfalle With Basil

Preparation Time:15mins
Cooking Time:5mins
Serves:2
Difficulty Level:Easy

Ingredients

2cups Farfalle pasta ( cooked al dente)
1medium onion, cubed
6-7garlic pods, chopped finely
1/4 of green and red bell pepper, cubed
1small tomato cubed
1tsp oregano
9-10basil leaves
1tsp crushed black pepper/ paprika/ cayenne pepper
salt to taste
olive oil + butter mix, about 3tbsp

Method

Boil about a cup of pasta in about 8-10cups of water with a teaspoon oil and a table spoon salt.
Simultaneously, chop the veggies while the pasta gets cooked.
In a pan take butter and olive oil and once hot add the garlic and let it brown lightly.
Add the onions and sauté. Add the seasonings.
Tip in the pasta and toss on high flame for a few seconds. Add the remaining veggies and cook for 1-2minutes on medium before serving.
Add the basil leaves just before the final tossing on flame.
Serve hot garnished with more basil leaves.

Tips:

Add sufficient salt to the boiling pasta and always add the pasta once the water starts boiling, never add pasta to cold water.
Try to boil the pasta while the veggies/ sauce gets cooked. Always add hot pasta to the sauce. If the pasta is already cooked before adding it to the sauce, dip it in boiling water for 5secs and then add to the sauce.

Mooli Parathas/ Radish Flat Breads


          One more week in the US, then back to India, then a move, locally from Chennai to Bangalore, it's going to be pretty hectic for the next month or two, before we settle down, until then, hopefully I have enough posts in draft, to keep my blog going. Today's post, also from draft, is Mooli Parathas/ Radish Flat Breads. There are a couple of versions in this, some using grated raw radish, some using sauteed radish, I prefer the latter, it's less messy to roll out parathas using sauteed radish. I have used my own version of the filling, using some powdered roasted peanuts, making it a little more tasty and nutritious and they tasted very good with the cucumber raitha and mango chunda..

Need To Have
For The Dough

  • Whole Wheat Flour - 1 cup
  • Radish Juice - 1/2 cup
  • Red Chilly Powder - 1/4 teaspoon
  • Turmeric Powder - 1/4 teaspoon
  • Salt - 1/4 teaspoon

For The Filling

  • Radish ( after lightly squeezing the juice ) - 1 cup
  • Roasted Peanuts - 2 tablespoons, powdered
  • Red Chilly Powder - 1/4 teaspoon
  • Turmeric Powder - 1/4 teaspoon
  • Coriander Powder - 11/2 teaspoon
  • Asafoetida - 1/4 teaspoon
  • Chopped Coriander Leaves - 11/2 tablespoon
  • Grated Ginger - 2 teaspoons
  • Salt - to taste

Radish Juice - I had used the juice squeezed out before adding in the filling.

Method


          Heat some oil, add the grated ginger and asafoetida, saute for half a minute, then add the grated radish, red chilly powder, turmeric powder and coriander powder and salt, saute well till it gives out all the water and becomes dry. Now add the peanut powder and chopped coriander, mix it well and keep.


          Mix the flour with the salt, chilly and turmeric powders, adding the radish juice ( a little at a time ), make a soft dough, apply a teaspoon of oil, cover and keep for at least 15 minutes. Divide the dough and the filling into 6 equal portions.


           Take a ball of dough, roll it slightly, place the filling in the center and close it as shown.


           Place the side where we have closed the dough, facing up, and dusting some flour, roll it out into discs.


          Heat a skillet, place the rolled out disc, wait till you see small bubbles, flip it, apply some oil, flip it again, apply oil on the second side, cook it till brown spots appear on the bottom side. Flip it the third time and cook on the other side too. Remove and serve with a raitha or plain yogurt/ curd and pickle.


Note
I prefer cooking the parathas, flipping it only thrice, while cooking, you can press the parathas with the back of the ladle, if the parathas are rolled out well, it'll puff up.
If you don't like peanuts or are allergic to it,  can use some roasted besan/ gram flour in it's place.
Can replace the chopped coriander with chopped mint, and also can add some finely chopped green chillies along with the grated ginger, for a little more spicy taste.

Vegan Double Chocolate Cake


          Double Chocolate Cake, well, as the name suggests, it contains double the amount of chocolate, compared to the regular chocolate cake, one in the form of cocoa powder and the other in the form of chopped chocolate chunks. For this vegan recipe, I have used regular coke as a replacement for egg. I had noted down this recipe, using coke, for a regular vanilla cake so many years back from a newspaper, but got a chance to try it only now. I had made some changes and it turned out very well, the cake was so moist and light and tasted so good with the chocolate chunks here and there, I would say, a ' Double Delight ' for all chocolate lovers..

Need To Have

  • All Purpose Flour/ Maida - 1 cup
  • Unsweetened Cocoa Powder - 1/2 cup
  • Chocolate Chunks - 1/4 cup
  • Oil - 1/4 cup
  • Regular Coke - 1 cup
  • Powdered Sugar - 1/2 cup
  • Baking Powder - 1/2 teaspoon
  • Baking Soda - 1/2 teaspoon
  • Vanilla Extract - 1/2 teaspoon

Method


          Sift the flour, baking powder and baking soda. In a mixing bowl, add the oil, sugar, vanilla extract and half the coke and mix well. To this add the sifted flour and mix it well, without any lumps.


          To this add the chocolate chunks and the remaining coke and mix it. Pour it into a greased 8" square pan and bake it for 25 minutes at 180 C. Remove, cool for 3 to 5 minutes, remove it from the pan and let it cool completely before slicing.


Note
The sugar I have used was correct for us and the chocolate chunks that I have used is 60% cocoa, so if you using an even darker chocolate, then increase the sugar.
Use a coke can or coke bottle immediately after you open it, that fizz is very important to this cake.
