Capsicum Curry With Peanuts And Sesame Seeds


          As I have mentioned so many times, capsicum is one vegetable, that I always have in my fridge, it is a very versatile vegetable and so many dishes can be made with it. It pairs beautifully with so many vegetables, it takes less time to cook and most importantly, can be chopped in minutes. For today's curry I have cooked the capsicums with some roasted peanut and sesame seeds powder which gives a nice taste and flavor to it. It's again an easy one, very ideal for those busy weekdays and goes well with both rice and rotis..

Need To Have

  • Capsicum - 3, diced
  • Onion - 1 medium, chopped
  • Tomato - 1 medium, chopped
  • Turmeric Powder - 1/4 teaspoon
  • Red Chilly Powder - 1/2 teaspoon
  • Mustard Seeds - 1/2 teaspoon
  • Cumin Seeds - 1/2 teaspoon
  • Raw Peanuts - 3 tablespoons
  • White Sesame Seeds - 1 teaspoon
  • Curry Leaves - 10
  • Salt to taste

Method


          Dry roast the peanuts and sesame seeds, cool, peel the peanuts and make a coarse powder with it and the sesame seeds.


          Heat some oil, add the mustard and cumin seeds, when it starts spluttering, add the onions and saute till it turns pink, then add the capsicum and saute for 2 minutes.


          Add the tomatoes, turmeric and chilly powders and salt, mix for one more minute, cover and cook till the capsicum is cooked. Now add the ground powder, mix for another 2 to 3 minutes till everything comes together. Finally mix in the curry leaves and switch off.


Note
If you get roasted and peeled peanuts, it saves time, also while roasting the sesame seeds, cover with a lid, it prevents the sesame seeds from popping all over.

Microwave Apple Jam


          Homemade jams are always more special than the store bought ones and I had always wanted to make some, but kept putting it off since my family is not the 'jam' kind, they like savory sandwiches better. But this time I had so much apples at home, I had bought some and then a visiting friend had got some more, and I knew I had to do something with it. This apple jam, it's from a cook book that came with my microwave oven. It's such an easy method, I followed the original recipe, except for the amount of sugar and I added some ginger which gave a nice flavor and taste to the jam. My daughter who's not a big fan of jelly sandwiches, loved this jam and I was so happy, that my maiden attempt at jam making was a success..

Need To Have

  • Apples - chopped, 21/2 cups
  • Sugar - 1/2 cup
  • Grated Ginger - 1/2 teaspoon
  • Lemon Juice - 2 tablespoons

Method


          In a deep microwave safe bowl, take the chopped apples, sugar and ginger, mix and microwave it at 100% power level for 5 minutes. At the end of 5 minutes, it would look slightly cooked, cool it and blend it. Don't make a very smooth paste, it's okay to have a couple of pieces here and there, it gives a nice texture to the jam.


          Take the mixture in the same microwave bowl and this time microwave it at 60% power level for 10 to 15 minutes, mixing it in between after every 2 to 3 minutes. The final product should be thick and should have a jam consistency, remove it from the microwave, mix in the lemon juice, cool and refrigerate.


Note
I cooked the jam, the second time for 15 minutes, but this is a general guidance and it could be more or less, depending on your microwave model.
The amount of sugar you add depends on the sweetness of the apples, taste the ground mixture, you can always add more sugar at this stage.

Potato And Lentils, Aloo Dal


          On weekdays, when I pack lunch, and when it's rotis, I try to make some side dish that has some protein in it, usually by adding some dal/ lentils or some form of soy, so that it's filling and doesn't make you hungry very soon. Today's dish is one such, I have cooked moong dal along with potatoes, and I have added kasuri methi which gives the dal a nice flavor. This is so easy to make, you have to only dice the potatoes and tomatoes and the entire cooking can be done in the pressure pan. This dal goes very well with pilafs, rotis or even with dosas..

Need To Have

  • Potatoes - 1 cup, diced
  • Tomato - 1 medium, chopped
  • Moong Dal/ Split, Husked Green Gram - 1/4 cup
  • Chana Dal - 4 teaspoons
  • Mustard Seeds - 1/2 teaspoon
  • Cumin Seeds - 1/2 teaspoon
  • Dried Red Chillies - 4, broken into 2 pieces
  • Asafoetida - 1/4 teaspoon
  • Kasuri Methi - 2 tablespoon, crushed
  • Turmeric Powder - 1/4 teaspoon
  • Salt to taste

Method


          Wash together the two dals and keep. Heat some oil, add the mustard and cumin seeds, when it starts spluttering, add the broken red chillies and the asafoetida and mix, immediately add the chopped potatoes and saute for 2 to 3 minutes.


          Now add the kasuri methi and tomatoes and mix for another minute, then add the dals/ lentils, turmeric powder  and mix once.


          Add about 21/2 cups of water and salt, cover the pressure pan and cook. After the first whistle, reduce the heat to minimum and cook for another 6 to 7 minutes and switch off. Once the pressure is all gone, open the lid, depending on the consistency, add a little more water, or if it's very watery, cook for some more time till it becomes a little thick.


Note
Kasuri methi is dried fenugreek leaves and it's available in all Indian grocery stores.
If you don't have a pressure pan, you can do the entire cooking in a heavy bottomed pan, soak the dals for 1/2 and hour to an hour to speed up the cooking process.
Potatoes can be replaced with chayote or sorakkai/ bottle gourd/ lauki/ ridge gourd, the dish becomes more healthy.

Cooking And Frying Oils-how do They Affect Your Health?

Millions of users around the world use healthy cooking oil for frying and food preparation. There are different methods to cook food like frying, grilling, roasting, baking, etc. Out of these, frying has turned out to be the least healthy as the food absorbs all the oil in comparison to the other modes of cooking, where oil is definitely used but it is not absorbed. This does not mean food should not be fried; it depends on frying habits.

Foods cooked or fried with excess or unhealthy oil is certainly not good for health, fats that are not good for health are saturated and trans fats and the good ones are monosaturated and polysaturated ones, these fats decrease the risk of disease. Healthy Oil for frying includes oils such as canola, sunflower, olive and corn, while the bad ones include palm, kernel, cocoa butter, margarine and shortening.

Cooking oil is mostly glycerol esters or fatty acids; these can be derived from animals and plants. Oil is mostly used as a heat transfer platform to cook food. While cooking or frying, oil is heated to a certain temperature that causes a reaction like oxidation, hydrolysis, polymerisation, etc. The products that are degraded include fatty acids, triglycerides, etc, if cooking oil is heated again and again its colour will change and it will give rise to an unpleasant odour as it oxidises.

If cooking oil for frying is used for an increased duration, it will cause a lot of degradation and the toxicity of this will increase as well. There are so millions of hotels, restaurants, and food joints around the world. It is imperative that the food industry should choose cooking oil of good quality and stability, use appropriate equipment, select the most appropriate temperature for frying or cooking food, if it is used once it should be filtered to remove food particles, if the it is reused number of times, then it should be replaced.

Let's talk about trans fatty acids in brief, these fatty acids are produced if the oil is fried repeatedly, it will come from partially hydrogenated vegetable oil. Tran's fatty acids decrease good cholesterol (HDL) that helps to prevent blockage of arteries and increases bad cholesterol (LDL) that causes blockage of arteries. Cooking oil with high volumes of Trans fatty acids increase the risk of diabetes, coronary heart disease, gall stones, obesity.

What should be done to avoid the consumption of these oils; consumption of cooking oils for frying should be reduced, whilst other cooking methods should be used like boiling, steaming, roasting, stir frying, etc. Tran's fats are found in the following products like hydrogenated vegetable, partially hydrogenated vegetable, refined vegetable oil, butter, margarine and shortening.

Talking about pressure frying, foods like chicken tastes good when it is pressure fried in a pressure fryer as they contain lesser number of fats, in comparison to open fried foods. These pressure fryers consume less amount of cooking oil than open fryers and they cook faster at lower temperatures causing lesser number of Tran's fatty acids with low absorption.

I cook from time to time so I'm pretty much familiar with the stuff I have in my kitchen. Mom says I make the best buffalo wing sauce while my raspberry vinaigrette dressing recipe is fast becoming a favorite at family gatherings. I've recently experimented with marinades using what I have in my pantry and I'm close to perfecting what I consider to be the best marinade for chicken. Now who says cooking is boring, huh?

I credit my love for the culinary arts in keeping me healthy all these years. I am now conscious of what I eat and even more with the food preparation. To eat healthy, I made healthy choices in what I eat all the time - meals and snacks. Eating a healthy, balanced diet provides me the necessary nutrients I need. These nutrients give me energy and keep my heart beating, my brain active, and my muscles working. And it's all thanks to my well-stocked pantry.

Potol Posto, Parwal/ Pointed Gourd In Poppy Seed Paste


         When I was back in the US, I used to see this vegetable called as Potol/ Parwal/ Pointed Gourd at the Indian grocery stores, it looked similar to tindora/ kovakkai/ gherkins, but a little plumpy. I had no idea where to use this vegetable or how to cook it or how it tasted once cooked. Then after moving to Chennai, I didn't see it, but now in Bangalore, I am seeing this vegetable everywhere, but I still didn't buy it till a couple of weeks back. I had bought this Bengali cook book called Bangla Ranna, while browsing through it, I saw that this vegetable is widely used in Bengali cooking. I have tasted posto a couple of times, which is basically a vegetable dish, in which the chosen vegetable ( usually potato, potol and even ridge gourd ) is cooked in a poppy seeds gravy. I checked a couple of other Bengali food sites and then made this, reduced the amount of poppy seeds and of course I haven't used mustard oil. This dish goes very well with rice, even if you don't find or don't want to try parwal/ potol, try this curry once with the common potatoes..

Need To Have

  • Potol/ Parwal/ Pointed Gourd - 8 pieces
  • Nigella Seeds/ Onion Seeds - 1 teaspoon
  • Turmeric Powder - 1/4 teaspoon
  • Khus-khus, White Poppy Seeds - 2 tablespoons
  • Green Chillies - 2
  • Salt to taste

Method


          Peel the potols, as shown, leaving a little bit of skin here and there. Slice each into four pieces, mix them with the turmeric powder and salt and leave aside for about 10 minutes.


          Soak the khus-khus/ poppy seeds in a little hot water for about 10 to 20 minutes, then grind it, add the green chillies and grind it further into a smooth paste.


          Heat some oil, add the potol pieces and saute them on medium heat till they get some light brown spots on them, remove and keep.


          In the same pan, add little more oil, add the nigella seeds, when it starts sizzling, add the sauteed potol pieces and mix for a minute, then add the ground poppy seeds paste.


          Keep sauteing it till the raw smell of the poppy seeds goes away, for about 7 to 8 minutes. Then add about 1/2 cup water, cover and cook till the vegetable is completely done. The finally consistency can be like a wet-and-dry mixture or like a gravy.


Note
Usually the amount of poppy seeds is almost double the amount that I have given, but since we are not used to eating so much of it in a curry, I reduced it, also instead of adding whole green chillies, I ground it with the poppy seeds itself.

My apologies for not being active here and the delay in announcing winners. There were several issues to be resolved at the home front; firstly the underground gas pipeline leak due to which we were devoid of LPG for 3weeks and cooking had become a herculean task but somehow I sailed through. Around the same time the younger kid fell sick and then the others in the family continued keeping me further away from active cooking and blogging. How I Learned to Make Pancakes

However, as I got older, I realized that they take a lot of work and it is no simple task to make them. Therefore, I asked my mother to teach me how to make this dessert so that I could make it for myself and so that I can make it for the entire family without having to ask anyone else to do it for me. I did not know what I was getting myself into.

First, I had to learn how to make the batter. This was not so complicated. By following the recipe to the letter, I had no trouble making the batter for the pancakes. I simply had to get all the ingredients in one bowl and stir properly. I think I should mention that I was about thirteen years old at that time and my hand-eye coordination was not so good. Therefore, I got myself a mixer and with its help, I was able to make that soft cream that was going to be turned into the best dessert on the earth.

I am sure that you have seen on TV those people that flip the pancakes without the help of any other instrument. They simply make a small gesture with the frying pan and they flip the pancakes in the air to turn them around. I have to admit that I was looking forward in mastering this art because it looked amazing and because it was one of the most interesting parts of the dessert making process. However, before I got to that I had to learn how long I should keep the pancake on one side in the frying pan in order for it not to burn. Of course, this was a bit of trial and error process, and after I burned a few of them, I finally figured out how long I should keep a pancake over the heat. I have to mention that my mother was very patient with me and she said that I had to make a mistake so that I could learn from it. Finally came the flipping of the pancakes. I have to say that we were lucky that we had a dog because much of the batter that I flipped in the air ended up on the floor. Without a patient mother and a very hungry dog, I would have not known how to make my favorite dessert today.

In conclusion, if you are going to teach your kids how to make pancakes, you have to have a lot of patience and you have to remember that they will make many mistakes before they get the perfect pancake from the frying pan. However, once they master this art, they will be able to make this amazing dessert.

Lumpfish Roe - The Perfect Appetizer

Lumpfish roe is usually considered as an alternative to caviar. It belongs to the family of cyclopteridae. It is mainly used as an appetizer. Here are some recipes that you can try:

Three-fish blinisWholemeal flour 140g (5 oz)Easy-blend dried yeast 1 sachetSalt ¼ tspCaster sugar 1 tspLukewarm water 175 mlEgg white 1Lukewarm milk 175 mlMelted butter 1 tbspToppingSour cream 120mlBlack lumpfish roe 1 jarPickled herring 150gSalmon trimmings 75 gFresh chives to tasteLemon wedges to taste

Method of preparation

Take a large mixing bowl and inside it mix the ingredients such as flour, salt and sugar. Make a hollow space in the center and pour the combination of lukewarm water and egg yolk. Whip it properly so that the ingredients are properly mixed. Then, include the flour in a gradual manner so as to make a thick mixture. Wrap the bowl with a cling film and keep it in a warm place. In the meantime, start preparing the topping. Include the sour cream and stir it well so as to get a smooth mixture. After that, take the lumpfish roe and separate it carefully. Cut the pickled herring and the smoked salmon using scissors. Wrap the topping carefully and let it cool. Then, start cooking the blinis. Preheat the oven to 150 degrees C. Include the egg white and whip it nicely until the ingredients are properly combined. Take a heavy skillet and heat it over moderate temperature. Then, include the melted butter into the pan and swirl it nicely so that the pans are coated well. Pour 2-3 tablespoons of the mixture. Cook it over average heat for 2 minutes until bubbles start forming on the surface of the blini. Let it set. Flip the side and cook the other side until it becomes golden brown. Keep the blinis in the oven so that it stays hot.

Take the leftover mixture and repeat the process. In order to serve, pour a teaspoon of sour cream into the center of each blin. Then, make a proper topping for the first 6 blinis using lumpfish roe. Top the rest using herring and the leftover smoked salmon. Transfer it into a serving plate and spread the chives over the blinis. Then, serve it along with lemon wedges.

How to prepare?

The first step is to slice the salmon and crab meat nicely. Take a bowl and mix the ingredients such as salmon, crab, mayonnaise, dill, lemon juice and zest. Keep ready the blinis and pour ¼ of the mixture into each blinis and make a proper topping with lumpfish roe. Repeat the process with the remaining batter.

Guacamole (Avocado/ Butter Fruit) With Cumin And Garlic


          After moving to India, getting my hands on a good avocado or butter fruit as they call it here was a big problem, the couple of times that I bought this while staying in Chennai, it always turned out bad and then I stopped buying it. But now in Bangalore, I am able to buy good avocados, they are in fact huge ones, almost double the size of the Hass avocados, that we get back in the US. My family loves guacamole, we have it as a spread on our sandwiches. Till date I only knew that they used the fruit for making guacamole, in milk shakes and ice creams, only recently, while reading about Coorg, I came to know, avocado is a staple there and they enjoy it simply with some honey, I have to try this yet. Coming to today's post, I have already posted a recipe for gaucamole in my blog, this is a slightly different version and it's more flavorful with the addition of garlic and cumin..

Need To Have

  • Ripe Avocado - 1
  • Onion - 1 small, chopped
  • Tomato - 1 big, chopped
  • Garlic - 1 clove grated
  • Red Chilli Powder - 1/4 teaspoon
  • Cumin Powder - 1/2 teaspoon
  • Lemon Juice - 1 tablespoon
  • Chopped Coriander Leaves - 2 tablespoons
  • Salt to taste

Method


          Slice the avocado in half, remove the seed, scoop out the flesh and keep. To this add the lemon juice and salt and mash it nicely.


          Now add the chilly powder, cumin powder, mix it, then add the chopped tomatoes, onions and grated garlic and mix it well. Finally mix in the chopped coriander and serve it with tortilla chips or as a spread on bread.


Note
When had as a spread on bread you don't get the garlic and cumin flavors that much, but when scooped onto a chip, the flavor is there.
Another variation, you can leave out both onions and garlic and add some chopped cucumber.

Palak Paneer - 2, Spinach With Indian Cottage Cheese


          Though I am calling this post as Palak Paneer - 2, this is in fact, the first palak paneer that I used to do for my daughter. It's a very simple dish that does not use much spices or masalas. Back in the US, we get baby spinach packets, just wash and blanch them and use them and they taste very good in this dish, better than the regular spinach. This dish is ideal for a small group, because we are using only spinach puree here, no onions or tomatoes to give more volume, for a bigger group or party, I would recommend my other recipe here. I got this recipe from a cook book of Chef Sanjeev Kapoor, a delicious recipe with minimum ingredients and maximum flavor..

Need To Have

  • Spinach/ Palak  - 1 big or 2 small bunches
  • Paneer/ Indian Cottage Cheese cubes - 1 cup
  • Green Chillies - 2
  • Cumin Seeds/ Jeera - 1/2 teaspoon
  • Garlic Cloves - 4-5, finely chopped
  • Cream Cheese - 1 tablespoon (optional)

Method


          Remove the thick stems from the spinach, wash and add it to boiling water and immediately switch off. Remove it from the hot water, dip in cold water (I usually skip this step), drain and grind it with the 2 green chillies. I got 11/2 cup of spinach puree.


          Heat some oil, add the cumin seeds, when it starts to sizzle, add the garlic and saute till it turns golden. Then add the spinach puree and boil for 2 minutes.


          Then add the paneer cubes, mix gently and cook for 2 more minutes. Finally mix in the cream cheese, remove and serve it with rotis.


Note
Since I didn't have fresh cream , I used cream cheese.
I don't fry the paneer pieces before adding, it's up to you, you can add it as such or shallow fry and add.

Need To Have

  • Cooked Rice - 4 cups
  • Potato - 1 big, diced
  • Capsicum - 1 big, diced
  • Onion - 1 medium, chopped
  • Tomato - 1 medium, chopped
  • Grated Ginger - 2 teaspoons
  • Turmeric Powder - 1/4 teaspoon
  • Red Chilly Powder - 1/2 - 3/4 teaspoon
  • Coriander Powder - 2 teaspoons
  • Asafoetida - 1/4 teaspoon
  • Mustard Seeds - 1/2 teaspoon
  • Cumin Seeds - 1/2 teaspoon
  • Dried Red Chillies - broken into 2
  • Curry Leaves - 10
  • Chopped Coriander Leaves - 2 tablespoons
  • Salt to taste

Method


          Heat some oil, add the mustard and cumin seeds, when it starts spluttering, add the red chillies, asafoetida followed by the chopped onions and saute till the onions turn translucent. Then add the potato and capsicum pieces and saute for another minute.


          Now add the grated ginger and curry leaves and mix for one more minute. Then add the turmeric powder, salt and about 1/4 cup water, cover and cook on medium heat till the potatoes are almost cooked. Then add the chopped tomatoes, chilly powder and coriander powder, cover and cook till the tomatoes break down and the potatoes are cooked fully.


          Now add the chopped coriander and keep sauteing for another 5 minutes till oil oozes out from the sides.


           At this stage, reduce the heat, add the rice and mix everything together till the rice is warmed through.


Note
You can also add chopped garlic and leave out the asafoetida, or make it even without the chopped onions.
When using leftover rice from the fridge, just bring it to room temperature and mix, so that it'll be easy to warm the rice fast.
You can add some cooked chickpeas/ chana, double beans, bean sprouts or even lobia/ karamani/ black eyed peas to make the dish even more nutritious.

Ingredients required For Fish Biryani:

Basmathi rice - 4 cups

Fish fillets - 8

Onion - 2

Green Chillies - 4 (minced)

Ginger-garlic paste - 4 tsp

Tomato - 4 ( crushed)

Coriander leaves(Cilantro) - 2 handful

Mint leaves - 2 handful

Chilli powder - 4 tsp

Coriander powder - 2 tsp

Cumin powder - 2 tsp

Turmeric powder - 1/2 tsp

Curd - 1 cup

Salt - to taste

Ghee - 4 tsp

Cumin seeds - 2 tsp

Cloves - 10

Cinnamon stick - 4 pieces

Cardamom - 4 pods

Bay leaf - 2

Star anise - 2

Cashew nuts/ Almonds - 20

For fish

Oil - 6-8 tsp

Chilli powder - 1 tsp

Salt - 1 tsp

Turmeric powder - 1/2 tsp

Pepper powder - 1/2 tsp

Egg - 2

Preparation Method for Fish Biryani:

Wash and soak the rice for half an hour. Fry the rice in 1 tsp of ghee and keep aside.Cut the fish fillets into small pieces.Take a small bowl, beat the egg in it and mix the spices under 'For fish' with it (chilli powder, pepper powder, salt and turmeric powder).Coat the fish pieces with the above mixture and deep fry it. Keep it aside.Heat ghee in a deep pan and add cinnamon, cardamom, bay leaf, star anise and cloves.Add onions and fry till it becomes golden brown. Add the remaining ginger-garlic paste and green chillies and fry for 2-3 minutes, until the raw smell disappears.Add the tomato puree along with the chilli powder, coriander powder, cumin powder, turmeric powder and curd and fry till a nice spicy paste is formed.Add part of the chopped coriander leaves saving a part for garnishing. Add chopped mint leaves and fry for another minute.Add the nuts to this mixture.Put the above mixture with the rice into a rice cooker with 6 cups water and let it cook.Once the biriyani is done add the fried fish pieces to it. Gently toss everything without breaking the rice and keep covered for 10 minutes. Do this when the biriyani is still very hot so that the flavour of the fish will get blended with the rice.Garnish with cilantro and few fried fish pieces on top and serve with raita.

Lumpfish Roe - The Ultimate Food For Food Lovers

Main instructions

Chicken skin

First, preheat the oven to 160 degrees C. Get rid of the fat inside the chicken skins. Place them on a parchment paper or baking paper that is spread on the baking tray. Position the chicken skins in such a way that they form a double layer. Keep the tray inside the oven and bake it for 2 hours. Do not forget to place oven proof weights on top before you start baking it. Take the skins out of the oven and let them cool. Then slice the skins into 3x10 cm pieces.

Rye bread

Preheat the oven to 160 degrees C. Cut the loaf into slices in lengthwise proportions. Then, cut these slices into 4x10 cm pieces. Arrange the baking paper on the baking tray. Rub the top with butter and wrap it properly with another baking sheet. Position another tray on the top. Like in the preparation of the chicken skins, place oven proof weights on the top and then keep it inside the oven. Bake it for 18 minutes. Trim properly the bread pieces.

Lumpfish roe

The first step is to rinse the roe properly so that you can get rid of the sinews. Do not forget to whisk it as well. Drain the excess liquid. Take the cheese and mix it with the ingredients like milk and cream and carefully fold it into the roe. Cut the dills into small pieces and introduce them into the mixture. Add 1 g of salt so as to give a proper taste to the dish.

Serving

Pour out 3g of roe mixture over the crisp rye bread. Position a baked chicken skin on the top. Then, serve it with the rye bread facing up.
