It is believed that primarily due to lifestyle choices diabetes is on the rise and can be prevented with some care and some changes in the respective lifestyle.

Chefs all over the world while preparing meals for diabetics tend to take some measures in to count so that the people who have diabetes can also enjoy their meal properly.

Experts say that one should try to lose weight if he or she is borderline diabetic, as losing even 5 to 10% of the total weight would help in reducing the blood sugar level considerably apart from lowering blood pressure and cholesterol level in the system.

There should be certain changes that should be made to the daily eating habits so that a healthier lifestyle can be adopted. And not necessarily the changes have to be drastic but some minor adjustments like replacing white rice consumption with brown rice, instead of white bread, consume whole wheat or wholegrain bread etc.

Also, according to the chefs one should include lot of non starchy vegetables and fruits in the diet for daily consumption. One should also limit intake of concentrated sweets such as candies, chocolate bars, ice cream etc. Alcohol should be totally avoided and the consumption of soft drinks should also be stopped.

It is best if one can cook with olive oil instead of ghee, butter and vegetable oil. Beans are believed to be great source of dietary fiber and should be made a part of daily diet. These are also believed to lower blood sugar levels to a great extent. Chefs believe that meals comprising fish is also a healthy dish which can be served to the diabetics.


You need to eat fish because it is a good source of omega 3fatty acids and help to keep your arteries clear. As much as you should avoid fatty foods and fatty meats, you can always go for lean meats like chicken breast etc. And if you cook it in slow cooker most of the nutrients can be retained and the flavor also turns out to be pretty good.

Nuts are considered to be good source of vitamin E and any meal which comprises of them is considered consumable and healthy. Fresh yogurt which is rich in protein is considered healthy and is believed to help you lose weight as well.

Another important kitchen ingredient which most of the time goes unnoticed but has immense benefits is cinnamon. It is believed that just by sprinkling cinnamon on the food and consuming it one can lower blood sugar level to a great extent.

It is advisable to totally avoid junk food, fried food and oily dishes as they don't have any positive impact on your body and only burden your system with unnecessary fat.

If you sometimes feel the urge to munch on something you can think about snacking on apples, cheese, homemade popcorn, plain biscuits etc. While eating you need to remember that moderation is the key and by choosing to eat healthy you are just helping yourself to lead a better life.

Midhi Pavakkai Curry/ Baby Bitter Gourd Curry


          Midhi Pavakkai/ Baby Bittergourd, this is another vegetable that I missed when I was in the US, but now that I am in India, enjoying it. They are added to sambars, but my favorite is this curry, once again my mother's recipe. This bitter gourd doesn't taste as bitter as the bigger variety, and when made it this way, tastes really good, I simply love it, try this simple and easy fry if you can find this vegetable..

Need To Have

  • Midhi Pavakkai - 2 cups
  • Onion - 1 medium, chopped
  • Red Chilly Powder - 1 teaspoon
  • Turmeric Powder - 1/4 teaspoon
  • Fennel Seeds - 1 teaspoon
  • Salt - to taste

Method


          Trim the ends of the pavakkai, slice it slightly in the middle but not completely. Grind the fennel seeds and the onion.


          Take the pavakkai in a pan, add the ground onion, turmeric and chilly powders and salt, mix it well. Put it on the stove, add some oil and a little water ( about 1/4 cup), cover and cook till the vegetable becomes soft. Remove the lid, the water should have dried up, add some oil, reduce the heat, keep roasting till it turns brown color and looks roasted.


Note
Though the vegetable is roasted, it'll still be soft.
Goes very well with rice and dal.

Three Quick Recipes for Cookies Without Heating the Oven (Chris Rawstern)

When looking at recipes for cookies, there is always the thought of the baking time. If you do not have a convection oven, it usually means baking in many batches, so the oven is on for long periods. What if baking was not necessary? When a busy Mom is on the go, anything that is quick and easy is going to be the first option. These recipes have been made many times over my years as a Mom, and I hope to pass along these recipes for everyone with time at a premium.

No Bake Caramel Cookies

In a large saucepan, combine 2 cups of granulated sugar, 3/4 cup butter and 2/3 cup evaporated milk. Bring this mixture to a rolling boil, stirring often. Remove the pan from the heat and add in one small package of instant butterscotch pudding mix and 3 1/2 cups of quick cooking rolled oats. Mix this together thoroughly and allow to cool for 15 minutes. Drop the dough from a teaspoon onto waxed paper. This will make about 5 dozen cookies.

No Bake Chocolate Haystacks

There are many existing recipes with this same title, but this is my favorite. In a large saucepan combine 2 cups granulated sugar, 1/3 cup unsweetened cocoa powder, 1/2 cup milk and 1/2 cup unsweetened butter. Bring to a full boil, stirring to mix well. Remove from heat and add in 3 1/2 cups quick cooking rolled oats, 1 cup coconut, 1/2 cup chopped walnuts and 1/2 teaspoon vanilla. Drop this mixture quickly from teaspoons onto waxed paper and allow to cool. This should make about 48 cookies, depending on size.

No Bake Apricot Macaroons

This recipe could not be easier with only 4 ingredients. In a large bowl, combine 2 1/2 cups of shredded coconut, one 14 ounce can of sweetened condensed milk, 2 cups finely diced dried apricots and 1 1/2 cups chopped walnuts. Mix thoroughly and chill for at least 30 minutes. This dough is very sticky to work with. Shape the mixture into small balls and roll into powdered sugar. These cookies should be kept refrigerated.


Apricots can be replaced with another dried fruit of choice such as raisins, dried blueberries or craisins. Tart fruits with the sweetness of the condensed milk make these so tasty. The use of craisins or dried cherries mixed with some green glaceed cherries for Christmas time would make a lovely presentation.

These recipes are all so very easy to make quickly. They are also good ways to have children learn about how to measure ingredients. They can be taught very young about filling a measuring cup or spoon and using a straight edged table knife to scrape level. They can be taught the measuring cup sizes and how to measure liquid ingredients. The actual combining is something a 6 or 7 year old child can do, as well as the scooping out of cookies onto the waxed paper. Forming them into balls is a simple process for these last cookies, and having sticky hands is surely no deterrent to a child.

Have fun with children and grandchildren making some of these cookies. Take delight in the time made more enjoyable by sharing and creating memories that will last a lifetime.

Eggless Dinner Rolls


          Again I am late at posting this month's challenge for the Eggless Baking Group, well I had baked and clicked a couple of days back, but the last few days, had been a little busy. This month's challenge was Dinner Rolls from Cooking Classy, we had to do an egg less version and I made it butter less too. I have halved the recipe and used only 2 1/2 tablespoons of oil, yet the rolls were perfect, so soft and delicious, great with some cheese or nutella. I had kept it outside for 2 days and then refrigerated it, tasted good with just 30 secs in the microwave. I thoroughly enjoyed baking this, a recipe that I'll be using again and again..

Need To Have

  • All Purpose Flour - 21/4 cups
  • Milk - 1/2 cup, warmed
  • Flax Seeds Powder - 11/2 teaspoon
  • Active Dry Yeast - 11/8 teaspoon
  • Sugar - 2 tablespoons + 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Oil - 21/2 tablespoons

Method


          Add the yeast to 2 tabs warm water and 1/4 teaspoon sugar ( follow the directions on the cover), leave to bubble and double up. Add the flax seed powder to 11/2 tablespoons of water and leave for 10 minutes. Whisk together the sugar, salt, oil, and flax seed mix. To it, add 2 cups of the flour and the yeast mix.


          Add the warm milk and bring it together to form a sticky and manageable dough. I needed another 1/4 cup of flour to make the dough, that's why I have given 21/4 cups of flour. Cover and leave it in a warm place for 11/2 hours, the dough would have doubled up by now.


          Punch it down, bring it together in a ball and transfer to a floured surface. Roll it out to a circle with about 13" diameter, slice it into half, then quarter, then each quarter into 3 wedges. Roll the wedges, starting from the broader end, tucking the thin end underneath.


          Place them on a greased baking tray, leaving a little space in between, since the rolls will expand. Cover with a plastic wrap and leave it for an hour for the second rising. After an hour, bake it at 190C for 15 to 20 minutes, till the top of the rolls turn golden. Cool it and remove the rolls.


Note
The original recipe uses butter in the place of oil and also some butter is applied on the rolled out dough before cutting and shaping into rolls. I just forgot the step, but the rolls were still simply superb.
Have used low fat milk, so I can call these low-fat dinner rolls.
The dough should be slightly sticky, not dry.
It took 20 minutes in my oven, but oven timings may vary, so keep an eye.
