Aval Upma, Poha Upma


          It's been a week since I checked on my blog, had been on a trip to Coorg and came back only on Saturday. It was a different kind of a vacation, very relaxed and peaceful, saw for the first time, a coffee estate, learnt a little more about what goes into that morning cup of coffee. We also visited Talakaveri, the place of origin of the river Kaveri, a holy pilgrimage for the Hindus. We also got to taste a little bit of the local Kodava cuisine, Coorg food, I would be trying out some of the dishes and posting them here later. Now coming to today's post, it's the simple aval upma or poha, this is one upma that my daughter likes and I have been trying out different versions of this simple and humble upma. I have already posted one, Pepper And Jeera Aval, and today it's going to be another one, here we are flavoring the rice flakes/ aval/ poha with lemon, ginger and green chillies. It's such a simple dish, can be put together in under 20 minutes and makes a good breakfast or an after school snack..

Need To Have

  • Aval/ Poha - 2 cups
  • Raw Peanuts - 3 tablespoons
  • Onions - 2 medium, chopped
  • Grated Ginger - 1 teaspoon
  • Green Chillies - 2, chopped
  • Turmeric Powder - 1/4 teaspoon
  • Mustard Seeds - 1/2 teaspoon
  • Urad Dal - 1 teaspoon
  • Asafoetida - 1/4 teaspoon
  • Curry Leaves - 10
  • Chopped Coriander Leaves - 2 tablespoons
  • Lemon Juice - 1 tablespoon
  • Sev - to garnish
  • Salt to taste

Method


          Wash the poha a couple of times, drain and keep for about 10 minutes. In the meantime, heat some oil, add the peanuts and roast for 2 minutes, then add the urad dal and mustard seeds.


          When the mustard seeds start spluttering, add the asafoetida, followed by the onions, green chillies, ginger and curry leaves. Saute till the onions turn pink, then add the turmeric powder and salt and mix for a few seconds.


          Now reduce the heat, add the drained aval and mix it well till it's slightly warmed up. Finally add the lemon juice and the coriander leaves, mix once and remove. Serve it garnished with some sev.


Note
I have used aval that's neither too thin nor too thick, if you use a very thick one, then you have to soak it for some time, then drain and use, don't use the very thin variety, it'll become very mushy.
Sev is deep fried chickpea flour noodles that can be made at home or it's readily available in Indian stores. You can also use aloo bhujia (potato noodles), I have used that only, instead of plain sev and if it's spiced up and has chat masala in it, then leave out the lemon juice.
We like the upma texture to be a little soft, so I just leave a tablespoon or more of water with the aval when draining it, this water is absorbed by the aval and makes it softer.
You can also add some cooked potato pieces or green peas and also some grated fresh coconut for extra taste and flavor.

My First Encounter With Tiramisu on my Trip to Italy

When I visited Italy, I learnt about Tiramisu and I have never since been able to forget this rather wonderful dessert. Since most Italian dishes are very delicious and quite elaborate, at the end of such a meal, a worthwhile dessert is usually necessary. It is for this reason that Italians are actually very famous for their desserts.

Tiramisu is simply an Italian dessert that is created with ladyfingers that are dipped in coffee. These are then layered with egg yolk and mascarpone cheese having been whipped together. Cocoa is often used to add flavor to the dessert. The exact recipe for this dessert has been used to create several other cakes, puddings as well as desserts. It has also been slightly modified in many parts of the world to attain different tastes of the dessert.

The exact origin of this dessert is an issue that is very much under debate. While some people attribute it to an Italian chef from Venice, others say it originated in the city of Siena. There are some that say that confectioners came up with the recipe as a way to honor Cosimo III who was visiting the country at the time. As I learnt while in Italy, the word Tiramisu actually translates to 'make me happy' or 'pick me up', which according to some stories is a representative for the caffeine that is used as a part of the ingredients.

The exact origin of this dessert may be an issue of debate but the moment I tasted it for the first time, I knew for a fact that whoever had created it was a real genius. Tiramisu basically has a number of layers of biscuits that are soaked in coffee along with a mixture of sugar, eggs and cheese. To be able to prepare this biscuit layer, the Savoiardi biscuits are simply soaked in any strong coffee or espresso for that matter. To make the mascarpone cheese layer, usually some egg yolks and sugar are prepared first and then the cheese is added to the mixture. While I was learning how to prepare this dessert it occurred to me that when the layers are being added, they are then topped with some cocoa powder dusting. The reason for this is in the fact that this dessert is supposed to have a specific taste and anything short of this would not attain the intended purpose.

There are many different ways one can prepare Tiramisu and while some people prefer to have it sweet, others prefer it less sweet. There are a host of other cheese mixtures that I often use when preparing this dessert and some actually have raw eggs while others do not even have any eggs at all. Occasionally I add Marsala wine to the recipe. I have also learnt that there are other liquors that can be added to the mixture both in the case of the cheese mixture as well as the coffee mixture. Some of the liquors that can be added include Port, Brandy, Irish Cream and Madeira.

The Best Recipes For Stir Fry

Here is a very popular and favorite recipe for stir fry that your family will love and enjoy. The spring vegetables and chicken breast strips stir fried with fresh ginger, the lime juice and a touch of soy sauce for a quick weeknight dinner. At home, we always enjoy making stir fries for dinner, the art of cooking veggies and protein in a wok and having dinner ready in just few minutes.

Many of us just use whatever vegetables we have on hand, a great way to clean up our refrigerators. You can just serve it over white cooked rice, quinoa, noodles or whatever. We always love the crunch of the sugar snap peas with the chicken, best crunching them raw while you are cooking.

As a super quick procedure, you can start first by using perhaps the Jaden's rice bran oil which is made from the outer layer of the rice kernel where all of the nutrients are found, which is very high in antioxidants and is perfectly suited for high heat wok cooking. But you can also use another type of oil that has a high smoke point such as sesame oil, canola or grape seed oil. This is below 200 calories, weight conscious people, this is gluten free, and low on carbohydrates, very clean that can be easily adapted for Paleo Diets.

As a Paleo note: For people you who are on a Paleo diet, you can substitute the cornstarch with arrowroot, and the rice oil with coconut oil, lastly the soy sauce with coconut liquid aminos. Here is the recipe for the SPRING STIR FRIED CHICKEN WITH SUGAR SNAP PEAS AND CARROTS. The original recipe serves 4 persons.

INGREDIENTS:

For the sauce:

1 tablespoon low sodium soy sauce (or Braggs Liquid Aminos or Tamari for GF)

1 tablespoon fresh lime juice

2 tablespoon water

1 teaspoon cornstarch

FOR THE STIR FRY:

1 pound boneless, skinless chicken breast, already sliced thin into strips

Salt to taste only

1 tablespoon rice bran oil, or canola

1 teaspoon fresh gingerroot, peeled and minced and sliced

2 teaspoon garlic, peeled and minced and chopped

1 cup sugar snap peas

1 cup of carrots, peeled and sliced into strips diagonally

Scallions to garnish

THE PROCEDURE:

In a small bowl, combine the soy sauce, the water, the lime juice, and the cornstarch. Stir them until they are smooth and the cornstarch is fully dissolved and set it aside.

Then season your chicken breast strips with salt.

Heat a large skillet or a wok over high heat. Wait until the wok is very hot, then add half of the oil and then add the chicken strips sizzling in your wok. Stir fry them occasionally until the chicken is cooked through and browned, for about 3 to 4 minutes. Remove the chicken from the wok with a slotted spoon into a plate and set aside. Reduce the heat to medium now.

Add the remaining oil into the wok. Then add the garlic and the ginger, and stir for 20 seconds. Then you can now add the sugar snap peas and the carrots or any other veggies that you may wish to add, and stir over medium high heat, until they are crisp-tender, for 3 to 4 minutes.

Return the chicken to the wok, and add the soy sauce-lime juice mixture. Mix them well and cook for 30 seconds to perhaps 1 minute. Serve immediately while they are hot.

You can easily find the paste in the market in small cans. It costs very low and tastes very bold which, I feel, is some of the virtues. To turn the paste into pizza sauce, add dried herbs like parsley, rosemary, oregano etc. Parsley is the perfect to start though. Now, add crushed pepper flakes, garlic flakes and salt. You can also add a pinch of sugar, depending on your taste.

The next step is, to add liquids. There are many options to choose from:

White wine vinegar - adds tart and crisp flavorOlive oil- adds sheen to the sauceBalsamic vinegar- for a bold flavorWater - doesn't add any flavor but gives you the consistency you desire.

In usual 1/4 to 1 cup addition of liquid will give you the desired consistency. If you want it to spread easily, adding more of olive oil will be helpful. Once you are done with this, add spices to adjust to the liquid levels. Add more salt and pepper and taste. With this, your instant pizza sauce is ready to use. You can use right away or keep it in refrigerator for a couple of hours so that the taste develops further. The choice is yours!

You can try it out and share your experiences with friends and family. One thing is sure though, making the sauce at home is very simple with no extra efforts required. Try it out and add flavor to your dishes.

Green Beans And Chickpeas Curry


         Back after a weekend of fun and celebration, hope everybody had a fun filled and safe Diwali. After all the sweets and savories for the past couple of weeks, today's post is going to be a simple curry with green beans and chickpeas/ garbonza beans or chana. It's very simple to make, goes very well with both rice and rotis, very healthy and nutritious..

Need To Have

  • Chopped Green Beans - 11/2 cups
  • Cooked Chickpeas - 1 cup
  • Onions - 2 medium, chopped
  • Tomatoes - 2 medium, chopped
  • Garlic - 5 cloves, chopped
  • Kasoori Methi - 1 tablespoon, crushed
  • Red Chilly Powder - 1/2 teaspoon
  • Turmeric Powder - 1/4 teaspoon
  • Cumin Powder - 1/2 teaspoon
  • Black Pepper Powder - 1/4 teaspoon
  • Cumin Seeds - 1/2 teaspoon
  • Salt to taste

Method


          Microwave the chopped beans with a little water and salt till cooked. Heat some oil, add the cumin seeds, when it starts spluttering add the onions and garlic and saute for 2 minutes, then add the kasoori methi and mix for another minute.


          Now add the chopped tomatoes and saute till it starts to break down, then add the turmeric, chilly and cumin powders along with salt and keep sauteing till the tomatoes become mushy.


          Then add the cooked beans and chickpeas and keep mixing for another 5 to 7 minutes, finally add the pepper powder, mix and remove.


Note
The green beans retain the green color, if you cook them in the microwave.
Kasoori Methi is dried fenugreek leaves, available in Indian stores which gives a unique flavor.
I have added only 2 tomatoes as the ones available here are very sour, if you are using plum tomatoes, you can add more.
